Maple Chipotle Sauce ist die rauchig-würzige Grillsauce von Easton Reed mit Ahornsirup, gemahlener Chipotle-Chili und Melasse. Kein Raucharoma aus dem Fläschchen, keine reine Süßsauce, keine scharfe Hot Sauce.
Maple Chipotle Sauce ist die Ahorn-Chipotle-Sauce von Easton Reed in der 260-Milliliter-Glasflasche, deren Rauchnote allein aus der geräucherten Chili stammt. Innerhalb der Reihe lässt sie sich am besten über ihre Süßequelle einordnen.
Drei dunkle Saucen des Hauses süßen unterschiedlich. Die klassische Rippchensauce holt ihre Tiefe aus Melasse, die Honigvariante aus Blütenhonig, diese hier aus Ahornsirup mit vier Prozent Anteil.
Melasse schmeckt dabei mineralisch und leicht bitter, Honig blumig und rund. Ahornsirup liegt dazwischen: karamellig, mit einer holzigen Kante, die keiner der beiden anderen mitbringt. Diese Kante trägt die ganze Sauce.
Weniger süß als ihre Schwestern
Mit 43 Gramm Zucker je 100 Gramm ist sie die zurückhaltendste der dunklen Saucen. Der Abstand zu den Honigsorten beträgt gut zehn Gramm, und das schmeckt man deutlich.
Frei werdender Platz geht an die Würze. Paprikapulver, geröstete Zwiebel, Sojasauce und Currypulver bekommen Raum, den eine süßere Rezeptur ihnen nehmen würde.
Im Glas ist die Sauce dunkelbraun und samtig, mit einem leichten Glanz vom Invertzuckersirup. Sie fällt schwer vom Löffel und bleibt auf dem Fleisch stehen, ohne nachzulaufen.
Der Rauch der Chipotle liegt über allem, trocken und ledrig, eher wie ein heruntergebranntes Feuer als wie frischer Qualm. Er kommt sofort und bleibt bis zum Schluss.
Darunter arbeitet der Ahornsirup mit einer weichen, karamelligen Süße. Melasse und brauner Zucker geben ihm Tiefe, Branntweinessig hält von unten dagegen und verhindert, dass die Sauce satt wirkt.
Die Sojasauce arbeitet dabei unsichtbar im Hintergrund. Sie liefert die salzig-herzhafte Grundierung, die eine reine Tomatensauce nicht erreicht, und tritt selbst nie als eigene Zutat hervor.
Zuletzt meldet sich das Currypulver mit Kurkuma und Koriandersamen. Diese warme, leicht erdige Würze ist in einer Barbecuesauce ungewöhnlich und trennt sie von jeder handelsüblichen Rauchsauce.
Scharf im eigentlichen Sinn ist sie nicht. Chipotle und Cayennepfeffer stehen beide unter einem Prozent und liefern eine leichte Wärme im Nachhall, mehr nicht.
Wer eine Sauce mit deutlicher Schärfe erwartet, wird sie als zu zahm empfinden. Und wer Rauch grundsätzlich nicht mag, findet hier keinen Zugang, denn die Rauchnote lässt sich nicht herausschmecken oder wegkochen.
Auf Schweinebauch, Bohnentopf und Ofenkürbis
Sie ist die Sauce für alles, was Röstaromen und Süße gleichzeitig verträgt. Schweinebauch, Spareribs und Pulled Pork sind ihr naheliegendstes Einsatzgebiet.
Pinseln Sie Rippchen erst in den letzten zehn Minuten ein, sonst verbrennt der Zucker über direkter Glut. Schweinebauchscheiben aus dem Ofen bekommen bei 180 Grad zwei Durchgänge im letzten Viertel der Garzeit.
Ihre zweite Stärke ist Gemüse mit eigener Süße. Ofenkürbis, Süßkartoffelspalten und Maiskolben werden nach dem Garen mit zwei Esslöffeln untergehoben. Geröstete Möhren vertragen sie ebenso.
Im Topf ersetzt sie eine ganze Gewürzliste. Rühren Sie drei Esslöffel in 400 Gramm abgetropfte weiße Bohnen, geben Sie eine halbe Tasse Brühe dazu und lassen Sie alles zwanzig Minuten leise ziehen. Das ergibt einen Bohnentopf mit Rauchnote ohne Speck.
Pulled Chicken bekommt Farbe und Würze in einem Arbeitsgang. Zwei bis drei Esslöffel nach dem Zupfen reichen für 500 Gramm Fleisch und binden die trockenen Fasern wieder zusammen. Auf einem weichen Brötchen mit Krautsalat ist das ein vollständiges Essen.
Zu hellem Fisch und feinen Salaten passt sie dagegen nicht. Ihr Rauch überdeckt dort alles, was den Teller ausmacht.
Klassischer und dunkler wird derselbe Grillabend mit der Melasse-Rippchensauce, fruchtiger mit der Pfirsichsauce aus demselben Haus.
Ein Detail am Rande: Ein Esslöffel Sauce, ein Teelöffel Senf und ein Schuss Wasser ergeben eine dünnere Mischung zum Bestreichen während langer Garzeiten. So bleibt die Rauchnote auch bei niedriger Temperatur über Stunden präsent.
Vierzig Liter Saft ergeben einen Liter Sirup
Ahornsirup entsteht nicht im Baum, sondern im Topf. Aus dem Stamm läuft im Frühjahr ein klarer, kaum süßer Saft mit rund zwei Prozent Zucker.
Erst das stundenlange Einkochen macht daraus Sirup. Rund vierzig Liter Saft ergeben einen Liter fertigen Ahornsirup, der bei etwa 104 Grad seinen Punkt erreicht.
Bei dieser Hitze entstehen die Röstnoten, die den Sirup ausmachen. Im rohen Saft ist davon nichts zu schmecken, und genau deshalb schmeckt Ahornsirup nach Karamell und nicht nach Baum.
Die Farbklassen von hell bis sehr dunkel bilden ab, wie spät in der Saison geerntet wurde. Späte, dunkle Sirupe haben mehr Röstnoten und weniger Feinheit, und für eine Grillsauce sind genau diese die richtige Wahl.
Der zweite Fachpunkt steckt im Currypulver, und er ist kein Zufall. Bockshornklee, eine der Zutaten der Mischung, enthält denselben Aromastoff, der auch in Ahornsirup vorkommt.
Sotolon heißt dieser Stoff, und er riecht in hoher Konzentration deutlich nach Ahorn. Currypulver und Ahornsirup teilen also eine Duftnote, was ihre Verbindung in dieser Sauce erklärt.
Entwickelt wurde die Rezeptur bei Ryan's Specialties in Augsburg, gekocht wird sie in Europa. Der Griff zu einem europäischen Currypulver in einer amerikanischen Grillsauce ist die eigenwilligste Entscheidung der ganzen Reihe.
Er stammt erkennbar aus einer Küche und nicht aus einem Marketingplan. Wer die übrigen Rezepturen des Hauses durchgeht, findet an keiner anderen Stelle eine vergleichbare Anleihe.
Ein Gewürzschrank aus zwei Kontinenten
Was diese Sauce grundlegend von anderen Rauchsaucen trennt, ist die Herkunft ihrer Bausteine. Ahorn kommt aus dem Norden Nordamerikas, Chipotle aus Mexiko, das Currypulver aus der europäischen Gewürzküche.
Drei Traditionen in einer Flasche klingen nach Beliebigkeit, ergeben hier aber ein geschlossenes Bild. Der gemeinsame Nenner ist die Röstnote, die alle drei mitbringen.
Ahornsirup bekommt sie beim Einkochen, die Chili im Rauch, das Currypulver beim Rösten der Samen. Drei verschiedene Wege führen zu verwandten Aromen, und genau darauf ist die Rezeptur gebaut.
Eine Einschränkung bleibt: Als Allzwecksauce für den Kühlschrank taugt sie nicht. Sie ist zu eigen, um beiläufig neben Pommes zu stehen, und verlangt ein Gericht, das ihr standhält.
Für ein Menü lässt sie sich außerdem über mehrere Gänge führen. Sie glasiert den Hauptgang, würzt eine Beilage aus Ofengemüse und steht am Ende neben einem gereiften Hartkäse noch immer richtig.

Gekocht wird in Europa, nach Rezepturen mit amerikanischer Handschrift. Die Saucen kommen in der schlanken Glasflasche zu 260 Millilitern, die Fine Pairings im 230-Gramm-Glas. Auf jedem Etikett steht das Motto des Hauses: Crafted for the Love of Food.

How it all began
Does this sound familiar? You return from vacation with a bottle of olive oil from Portugal in your suitcase, a jar of fruit spread from South Tyrol, perhaps a bar of chocolate from a small factory in France — and you ask yourself: Why can't I find something like this easily at home? We kept asking ourselves this question.
We are Kerstin and Stephan Uhlenbusch from Nordhorn, a city on the German-Dutch border. On our travels through Europe, we made the most wonderful culinary discoveries: mountain apple juices from the high altitudes of South Tyrol, Breton barrel butter, handmade pasta from Italy, French sea salt. It wasn't the big luxury products that fascinated us, but rather the honest, artisan-made foods from people who put their heart and soul into their products.
In 2002, we decided to turn this passion into our profession: to make good food accessible to everyone who cannot travel to the producers themselves. This is how our gourmet shipping business came into being — initially as a store in Nordhorn, soon after as one of the first gourmet online shops in Germany. Back then under the name nur Gutes (only good things) — today we continue it as ginussland.com. The ambition has remained the same: this is where good taste resides.
Who we are
What drives us is the same curiosity with which we started in 2002: finding out who truly makes good food. Over more than two decades, we have built a network — with producers, traders, restaurateurs, and culinary artisans from all over Europe.
Kerstin was the managing director of the association of leading delicatessen merchants in Germany — the industry association of the country's best owner-managed delicatessen stores. In this role, she not only accompanied but actively shaped the German delicatessen industry. With the deli Festival, we also launched our own B2B trade fair for delicacies, which brought together producers, traders, and restaurateurs from all over Europe. The festival no longer exists today — but the relationships that arose from it still accompany us.
What does this mean for you? We know our industry like almost no one else. Chambers of commerce and economic development agencies from all over Europe repeatedly introduce us to exciting producers who want to offer their products on the German market. This way, genussland always offers something you won't find in any supermarket and hardly in any other shop.

An extra virgin olive oil from Portugal, a genuine Aceto Balsamico from Modena, Fleur de Sel from the Breton coast, hand-mixed spice blends. Fruit spreads, aromatic honey, truffle delicacies, chutneys, and mustard sauces. Vintage sardines and fine canned fish, risotto rice, and handmade pasta — basic ingredients for honest cooking and specialties for special moments.
Our fresh delivery service brings the legendary Beurre Bordier from Brittany, Italian Burrata, and fine salami to your home — securely packaged and continuously chilled.
Wine is particularly close to our hearts: white wine from Rheinhessen and the Pfalz, red wine from Austria and Burgenland, rosé for barbecue season, natural wine for the adventurous, sparkling wine and champagne for special moments. Not from all over the world — but from winemakers we have personally visited and whose work we appreciate. Many of them work organically or biodynamically.
Our Philosophy
What makes a product a genussland product? We ask ourselves this question for every single item we add to our range. The answer is never one-dimensional – it's the combination of craftsmanship, origin, ingredients, and the people behind them.
We ask many questions before a product finds its way into our shop. How is it made? Where do the raw materials come from? What philosophy does the manufacturer pursue? We quickly notice whether we are hearing marketing clichés or if a producer is happy to explain their journey. It is precisely this enthusiasm that we seek – and repeatedly find.
Craftsmanship. We prefer products from small manufactories and family businesses that often produce their culinary treasures by hand for generations. The careful processing and artisanal skill can be tasted in every bite.
Best Ingredients. For us, good quality begins with the raw materials. Whether it's fruit, vegetables, milk, meat, or grain – we ensure that our manufacturers rely on first-class, as natural as possible, ingredients. Many of our producers are organically certified; our shop itself is organically controlled under the number DE-ÖKO-037.
Origin and Regionality. We appreciate products with a clear regional identity. A South Tyrolean mountain apple juice made from slowly ripened, old apple varieties. A Portuguese olive oil from trees that have shaped the landscape for centuries. These stories of origin make delicacies what they are.
Personal relationship with the manufacturer. We have known many of our suppliers personally for years, some for over two decades. We visit them, taste together, and exchange ideas. This proximity guarantees transparency and trust.
At the end of the day, it has to taste good. We try all products ourselves – not just once, but again and again while cooking, at the table, on the plate. Only what convinces us personally finds its way into the shop.

What brings us the most joy: We get to accompany passionate individuals on their journey. People whose drive it is to make a good product even better. Some have been with us since our founding - for over twenty years.
There's the South Tyrolean fruit farmer who presses mountain apple juice from old, slowly ripened apple varieties, unlike anything else. The Italian balsamic family who ages their vinegar in Modena for decades. The Breton butter manufactory whose hand-churned butter is on the menu of the best restaurants in Europe. The Danish licorice pioneer who reinvented a centuries-old specialty.
Behind every product in our shop stands a person, a family, a story. And it is precisely these stories that make the difference between an interchangeable food item and a true delicacy.

International Shipping Costs
We are also happy to ship your orders to many European countries such as Austria, Netherlands, Belgium, Luxembourg, France, Spain, Portugal. Here, a minimum order value of 50 € applies. There is no free-delivery value. No shipping of products subject to excise duty (alcohol). Gross prices are adjusted to the individual VAT rates of the respective country. Sales tax will be charged in any case. The shipping price will be calculated at checkout and displayed before the order.
For international deliveries, shipping costs are calculated per package. (Maximum 18 bottles per package or 25kg). Shipping to certain areas or islands may incur additional costs, which we will inform you of before shipping. Remote areas cannot be supplied. No freight forwarding to islands.
For international deliveries, providing the recipient's telephone number with the order is mandatory. (The specification of a telephone number is obligatory for orders abroad.)
Alcohol
Alcohol is only shipped to adults via UPS or DHL; the delivery person will verify age upon delivery. By ordering alcohol, you also confirm that you or the recipient are of legal age.
Shipping Service
For manual creation of shipping labels (for orders by phone, email, or by submitting addresses via spreadsheet), we charge an additional 2.50 € per shipping label for this service, in addition to the stated shipping costs.

Investigation of failed payments
For the investigation and refund of payments incorrectly made to us, we charge a processing fee of 5.00 €.
