Estense Farm

While Modena's old family acetaie rely on centuries-old tradition, the house of Alico — home to the Fattoria Estense brand — takes a different approach: it transforms the artisanal production of Aceto Balsamico into modern manufacturing, controlled at every stage, and certified according to the region's strictest standards. The result is aceti that are not far removed from Tradizionale DOP, but remain accessible and suitable for everyday use — without sacrificing quality.

Alico was founded in the late 1980s and has been a member of the Consorzio Tutela Aceto Balsamico di Modena since 1993, the control body that monitors compliance with DOP and IGP specifications for aceto from the region. The Fattoria Estense brand itself is a tribute to the original family business on which Alico is built.

The four classes of Fattoria Estense

The product range is tiered by aging level, making selection easy:

Bronzo — the classic entry-level. Solid, versatile, suitable for everyday kitchen use. Vinaigrettes, marinades, grilled vegetables.

Argento — the mid-range class with longer aging. Denser consistency, more sweetness, suitable for dark sauces, grilled meats, aged cheeses.

Oro — the premium class within the IGP line. Very dense, very complex, for special occasions — foie gras, aged hard cheeses, chocolate desserts.

Tradizionale di Modena DOP — the top class, in the Affinato (at least twelve years) and Extra Vecchio (at least twenty-five years) categories. Drop by drop — like with Modena's great family houses.

When to choose Fattoria Estense instead of a family Acetaia

If you are looking for reliable IGP quality with a clear class logic, without going for the top prices of individual family acetaie — Fattoria Estense is the pragmatic choice. The brand's Tradizionale DOP plays in the same league as those of the family houses; for the everyday classes Bronzo and Argento, you get a reliability that is often exactly what you need in upscale cuisine.
