White Temple Tea in der 100-g-Dose ist die mittlere Größe der Hausmischung von A.C. Perch's: weißer Tee aus China mit kandierter Ananas, Mango und Papaya, verpackt in Blechdose und Geschenkkarton. Kein Früchtetee, kein Teebeutel, keine Motivdose.
White Temple Tea ist ein aromatisierter weißer Tee des Kopenhagener Teehauses A.C. Perch's, hier als loses Blatt in der quadratischen 100-g-Dose. Drei Formate führt das Haus für diese Mischung, und sie sind sauber gestaffelt. Die 80-g-Motivdose der Iconics-Reihe ist zum Kennenlernen gedacht, die runde 175-g-Dose für den Vorrat. Die 100-g-Dose liegt dazwischen: hellgraues Blech mit Goldprägung, dazu ein weißer Karton mit grauer Schleife. Geöffnet riecht sie nach Ananas und Orangenschale, das Blatt darunter ist hell und mit Fruchtstücken durchsetzt. Das ist die Größe für alle, die den Tee schon kennen und ihn verschenken wollen, ohne gleich zur großen Dose zu greifen.
Süße aus der Frucht, nicht aus der Zuckerdose
White Temple Tea schmeckt vollmundig und süßlich, Ananas und Orange vorneweg, mit einem weichen, runden Nachklang ohne Bitterkeit. In der Tasse steht ein helles Goldgelb, deutlich blasser als ein Schwarztee. Der erste Schluck ist Frucht, erst danach meldet sich das Blatt.
Ananas und Orangenschale tragen die Mischung. Mango und Papaya legen eine reife, tropische Tiefe darunter, Johannisbeere und Sauerkirsche setzen eine leise Säure dagegen. Im Abgang bleiben Erdbeere und Aprikose, kurz und weich.
Der Weißtee selbst hält sich zurück. Mao Feng bringt Körper und eine zart heuartige Note, Silver Needle eine seidige Textur. Der kleine Anteil Jasmintee steuert einen blumigen Ton bei, der zwischen den Früchten aufblitzt, ohne sie zu übertönen.
Die Süße kommt aus der kandierten Frucht, und sie ist ein Aroma, kein Zuckerguss. Die fertige Tasse enthält unter einem Gramm Zucker je 100 ml. Wer allerdings einen unaromatisierten Weißtee erwartet, wird diese Mischung als zu süß und zu fruchtig empfinden. Sie ist als Komposition gebaut, nicht als Terroir-Tee.
Nach dem Abkühlen in der Tasse bleibt der Tee trinkbar, weil kaum Gerbstoffe nachziehen. Ein Blatt, das man in der Kanne vergisst, wird hier nicht bitter, nur kühl. Das macht die Mischung für Gäste dankbar, die langsam trinken.
Ein gehäufter Teelöffel je Tasse, sechs Minuten Zeit
Für eine Tasse White Temple Tea genügt ein gehäufter Teelöffel Blatt auf 250 ml Wasser von 80 °C, sechs bis sieben Minuten gezogen. Auf den Liter sind das sechs Gramm. Kochendes Wasser holt eine Herbe ins Glas, die diese Mischung von sich aus nicht hat.
Zum Frühstück passt der Tee zu Croissant und Aprikosenkonfitüre, weil die Orangenschale gegen das Buttrige arbeitet. Am Nachmittag begleitet er Mürbeteiggebäck oder eine Tarte mit Mango, ohne deren Süße zu verdoppeln. Zu einem Dessert aus Panna cotta mit Passionsfrucht ersetzt er den Dessertwein.
Als Cold Brew geben Sie zehn Gramm Blatt auf einen Liter kaltes Wasser und stellen die Kanne acht Stunden in den Kühlschrank. Abseihen, mit einem Zweig Minze servieren. Für einen alkoholfreien Aperitif brühen Sie den Tee doppelt so stark und kühlen ihn ab. Dann gießen Sie ihn eins zu eins mit Tonic Water auf, dazu eine Orangenzeste.
Die Fruchtstücke sinken beim Aufgießen und brauchen Platz. In einem engen Teeei bleibt das Blatt gedrängt und gibt wenig ab, eine weite Kanne oder ein großer Papierfilter arbeitet besser. Für alle, die ausschließlich Teebeutel benutzen, ist die lose Dose weniger geeignet. Dieselbe Mischung gibt es als Pyramidenbeutel.
Gut zu wissen: Kandierte Frucht zieht Feuchtigkeit an. Schließen Sie den Deckel nach jeder Entnahme, und lagern Sie die Dose nicht im Kühlschrank, sonst verklumpen Blatt und Frucht. Trocken und bei Zimmertemperatur hält die Mischung gut ein Jahr, das Aroma der Frucht lässt danach zuerst nach. Koffeinfrei ist sie nicht. Wer am späten Abend einen koffeinfreien Aufguss erwartet, ist mit einem Kräutertee besser bedient.
Hoflieferant seit 2002, nachgeahmt seit Jahren
A.C. Perch's Thehandel verkauft seit 1835 Tee nach Gewicht in der Kronprinsensgade, und der White Temple ist die Hausmischung, die andere dänische Teehändler seit Jahren nachahmen. Das Haus sagt das selbst, mit einer gewissen Gelassenheit. Die Rezeptur ist geblieben, die Kopien wechseln.
Die Krone auf Dose und Karton steht für den Titel Kongelig Hofleverandør, den Königin Margrethe II. dem Teehaus 2002 verlieh. Er wird in Dänemark nicht vergeben, sondern verliehen und regelmäßig geprüft. Für ein Geschäft, das Tee aus offenen Blechdosen abwiegt, ist das eine ungewöhnliche Auszeichnung.
Die kandierte Frucht erklärt, warum diese Mischung ohne Zuckerzusatz auskommt. Beim Kandieren liegen die Fruchtstücke über Tage in Zuckersirup, dessen Konzentration schrittweise steigt. Wasser wandert aus der Frucht, Zucker wandert hinein, bis das Stück formstabil und haltbar ist. Im heißen Aufguss zerfällt es deshalb nicht, gibt aber Aroma und einen Teil seines Zuckers ab.
Der grüne Anteil der Mischung ist Jasmintee. Dafür wird grüner Tee über mehrere Nächte mit frisch geöffneten Jasminblüten geschichtet, bis das Blatt den Duft aufgenommen hat. Die Blüten werden anschließend entfernt, ihr Aroma bleibt im Tee. Dieses Beduften ist ein altes Verfahren aus Fujian, und es ist der Grund, warum die Mischung neben Frucht auch eine blumige Linie hat.
Aromatisierter Tee heißt: echtes Teeblatt als Basis, ergänzt um Frucht und Aroma. Ein Früchtetee dagegen kommt ganz ohne Teepflanze aus und enthält kein Koffein. Die Unterscheidung entscheidet über Ziehtemperatur und Wirkung am Abend, deshalb lohnt ein Blick auf die Zutatenliste.
Die Größe zwischen Kennenlernen und Vorrat
Die 100-g-Dose ist das Geschenkformat dieser Mischung: groß genug für rund sechzehn Liter Tee, klein genug für einen Karton mit Schleife. Das sind etwa 65 Tassen, also mehrere Wochen täglicher Teetrinkerei oder ein Vierteljahr am Wochenende. Auch für ein Büro, in dem morgens eine Kanne aufgesetzt wird, ist die Menge sinnvoll bemessen.
Wer den Tee im Haus haben will, greift zur runden 175-g-Dose, die der Vorrat ist. Wer erst probieren möchte, nimmt die 80-g-Motivdose der Iconics-Reihe. Die 100-g-Dose trägt keine Motive, nur Schriftzug und Krone in Gold auf hellgrauem Grund. Sie richtet sich an Menschen, die eine nüchterne Verpackung schätzen und Tee ohne Dekoration verschenken möchten.
Als Gastgeschenk ist sie eine Alternative zur Flasche Wein, gerade für Gastgeber, die keinen Alkohol trinken. Ist der Tee aufgebraucht, bleibt die Dose als Behälter für das nächste lose Blatt im Gebrauch.
Einmal richtig aufgegossen, bei achtzig Grad und mit Geduld, und die Frage nach dem Zucker stellt sich am Teetisch nicht mehr.

How it all began
Does this sound familiar? You return from vacation with a bottle of olive oil from Portugal in your suitcase, a jar of fruit spread from South Tyrol, perhaps a bar of chocolate from a small factory in France — and you ask yourself: Why can't I find something like this easily at home? We kept asking ourselves this question.
We are Kerstin and Stephan Uhlenbusch from Nordhorn, a city on the German-Dutch border. On our travels through Europe, we made the most wonderful culinary discoveries: mountain apple juices from the high altitudes of South Tyrol, Breton barrel butter, handmade pasta from Italy, French sea salt. It wasn't the big luxury products that fascinated us, but rather the honest, artisan-made foods from people who put their heart and soul into their products.
In 2002, we decided to turn this passion into our profession: to make good food accessible to everyone who cannot travel to the producers themselves. This is how our gourmet shipping business came into being — initially as a store in Nordhorn, soon after as one of the first gourmet online shops in Germany. Back then under the name nur Gutes (only good things) — today we continue it as ginussland.com. The ambition has remained the same: this is where good taste resides.
Who we are
What drives us is the same curiosity with which we started in 2002: finding out who truly makes good food. Over more than two decades, we have built a network — with producers, traders, restaurateurs, and culinary artisans from all over Europe.
Kerstin was the managing director of the association of leading delicatessen merchants in Germany — the industry association of the country's best owner-managed delicatessen stores. In this role, she not only accompanied but actively shaped the German delicatessen industry. With the deli Festival, we also launched our own B2B trade fair for delicacies, which brought together producers, traders, and restaurateurs from all over Europe. The festival no longer exists today — but the relationships that arose from it still accompany us.
What does this mean for you? We know our industry like almost no one else. Chambers of commerce and economic development agencies from all over Europe repeatedly introduce us to exciting producers who want to offer their products on the German market. This way, genussland always offers something you won't find in any supermarket and hardly in any other shop.

An extra virgin olive oil from Portugal, a genuine Aceto Balsamico from Modena, Fleur de Sel from the Breton coast, hand-mixed spice blends. Fruit spreads, aromatic honey, truffle delicacies, chutneys, and mustard sauces. Vintage sardines and fine canned fish, risotto rice, and handmade pasta — basic ingredients for honest cooking and specialties for special moments.
Our fresh delivery service brings the legendary Beurre Bordier from Brittany, Italian Burrata, and fine salami to your home — securely packaged and continuously chilled.
Wine is particularly close to our hearts: white wine from Rheinhessen and the Pfalz, red wine from Austria and Burgenland, rosé for barbecue season, natural wine for the adventurous, sparkling wine and champagne for special moments. Not from all over the world — but from winemakers we have personally visited and whose work we appreciate. Many of them work organically or biodynamically.
Our Philosophy
What makes a product a genussland product? We ask ourselves this question for every single item we add to our range. The answer is never one-dimensional – it's the combination of craftsmanship, origin, ingredients, and the people behind them.
We ask many questions before a product finds its way into our shop. How is it made? Where do the raw materials come from? What philosophy does the manufacturer pursue? We quickly notice whether we are hearing marketing clichés or if a producer is happy to explain their journey. It is precisely this enthusiasm that we seek – and repeatedly find.
Craftsmanship. We prefer products from small manufactories and family businesses that often produce their culinary treasures by hand for generations. The careful processing and artisanal skill can be tasted in every bite.
Best Ingredients. For us, good quality begins with the raw materials. Whether it's fruit, vegetables, milk, meat, or grain – we ensure that our manufacturers rely on first-class, as natural as possible, ingredients. Many of our producers are organically certified; our shop itself is organically controlled under the number DE-ÖKO-037.
Origin and Regionality. We appreciate products with a clear regional identity. A South Tyrolean mountain apple juice made from slowly ripened, old apple varieties. A Portuguese olive oil from trees that have shaped the landscape for centuries. These stories of origin make delicacies what they are.
Personal relationship with the manufacturer. We have known many of our suppliers personally for years, some for over two decades. We visit them, taste together, and exchange ideas. This proximity guarantees transparency and trust.
At the end of the day, it has to taste good. We try all products ourselves – not just once, but again and again while cooking, at the table, on the plate. Only what convinces us personally finds its way into the shop.

What brings us the most joy: We get to accompany passionate individuals on their journey. People whose drive it is to make a good product even better. Some have been with us since our founding - for over twenty years.
There's the South Tyrolean fruit farmer who presses mountain apple juice from old, slowly ripened apple varieties, unlike anything else. The Italian balsamic family who ages their vinegar in Modena for decades. The Breton butter manufactory whose hand-churned butter is on the menu of the best restaurants in Europe. The Danish licorice pioneer who reinvented a centuries-old specialty.
Behind every product in our shop stands a person, a family, a story. And it is precisely these stories that make the difference between an interchangeable food item and a true delicacy.

Refrigerated Shipping
Our product range includes food items that react differently to heat. To ensure that every product arrives in perfect condition, we handle the shipping of two product groups with particular care.
Products requiring refrigeration
These items are marked with the note "kühlpflichtig" (requires refrigeration) in our shop — for example, Bordier butter, Parmigiano Reggiano from Cavola 993, Pancetta and Guanciale from Falorni, mountain herb ham and Tyrolean dumplings from Steiner, Prosciutto Crudo and truffle butter from Viani. We generally ship these products by express delivery with ice packs. They are only available via express shipping. The shipping costs will be clearly displayed before you complete your order at checkout.
Temperature-sensitive products
These items are marked with the note "temperaturempfindlich" (temperature-sensitive) — for example, salami and bacon specialties from Falorni and Steiner, as well as Goufrais cocoa confectionery. In cooler weather, they can be sent by standard shipping. In warmer weather, we switch the shipping to express shipping with ice packs before checkout — in this case, this shipping method is the only option, and the corresponding shipping costs will be displayed at checkout.
Shipping days for refrigerated and temperature-sensitive orders
To prevent any package from remaining in a distribution center over the weekend or public holidays, we only ship refrigerated orders from Monday to Thursday. Orders placed after Thursday will generally not be shipped until the following Monday. In summer, this rule also applies to temperature-sensitive products.
Packaging
Depending on the manufacturer, sausage and cheese specialties are supplied either vacuum-packed or traditionally without foil — for example, Italian salami from Falorni. If air is visible in a vacuum package upon delivery, this is not a quality defect. Please unpack the item and store it in the refrigerator, ideally wrapped in sausage paper or greaseproof paper.
Freight Forwarding
Freight forwarding is used for products that cannot be delivered as a package due to their size or weight. The selection is made automatically before completing the order. Please provide your phone number for scheduling the freight forwarding delivery.

Currently, we only ship within Germany. Shipping to Austria is in preparation — as soon as we can deliver there, you will find the details here.
Products subject to excise duty (alcohol) cannot be shipped to Austria.
Alcohol
Alcohol can only be shipped to adults. The deliverer will verify age upon delivery. By ordering alcohol, you also confirm that you or the recipient are of legal age.
Shipping Service
For manual creation of shipping labels, we charge an additional €2.50 per shipping label in addition to the stated shipping costs. Please note that we cannot retrospectively combine orders that have already been placed.
Investigation of failed payments
For the investigation and refund of payments incorrectly made to us, we charge a processing fee of €5.00.
