What you really need

The biggest single secret of Neapolitan pizza: The stone must be over 400 °C hot — measure it with an infrared thermometer, not with the display. Many seemingly lukewarm ovens are actually hot enough, many seemingly hot ones are not yet ready. The infrared thermometer costs €25 and after one evening makes the difference between "okay" and "like at an Italian restaurant".
