Truffle Ketchup. Sechzig Prozent Tomate, fünf Prozent Trüffelöl, halbierter Zucker.
Truffle Ketchup ist ein dunkler Trüffel-Ketchup von Easton Reed aus Tomatenstücken, Tomatenmark und fünf Prozent Trüffelöl im 280-Milliliter-Glas. Kein süßer Standardketchup, keine Trüffelcreme, keine Sauce zum Mitkochen.
Truffle Ketchup ist der Trüffel-Ketchup von Easton Reed, in dem Tomatenstücke und Tomatenmark mit je 30 Prozent nebeneinanderstehen. Neben einem gewöhnlichen Ketchup fällt zuerst auf, was fehlt.
13 Gramm Zucker je 100 Gramm sind etwa die Hälfte dessen, was der klassische Tomatenketchup derselben Reihe mitbringt. Dafür stehen 4,4 Gramm Fett in der Tabelle, was bei einem Ketchup selten vorkommt.
Beide Zahlen erklären sich gegenseitig. Das Trüffelöl bringt das Fett mit, und weil Fett die Aromen weit trägt, wäre die übliche Süße hier im Weg.
Ohne die Süße bleibt der Ketchup-Reflex aus
Der erste Löffel schmeckt herzhafter, als es die rote Farbe erwarten lässt. Wo ein Standardketchup mit Süße beginnt, steht hier zuerst konzentrierte Tomate mit klarer Säure.
Die Masse ist dunkel, dick und matt, fast wie eine kalte Sauce aus dem Topf. Sie glänzt nicht, weil das Öl im Ansatz gebunden ist und nicht obenauf schwimmt.
Der Trüffel legt sich als zweite Ebene über die Frucht. Erdig, leicht nussig, mit dem feuchten Ton von Waldboden, und er bleibt spürbar länger stehen als die Tomate.
Getrockneter Knoblauch und Knoblauchpulver mit je einem Prozent halten die Mitte zusammen. Getrocknete rote Paprika legt eine milde Röstsüße darunter, die den Zucker teilweise ersetzt.
Der Pilzextrakt im Trüffelöl arbeitet dabei im Hintergrund. Er bringt jene herzhafte Grundierung mit, die Köche umami nennen, und verlängert den Nachhall des Trüffels.
Schärfe kommt an keiner Stelle dazu, im Rezept steht kein Chili. Mit 1,9 Gramm Salz je 100 Gramm ist das Glas dagegen deutlich gewürzt.
Wer einen süßen Ketchup für Pommes am Kindertisch sucht, wird ihn als zu streng empfinden. Die Süße fehlt hier als Puffer, und die Tomate steht ungeschützt vorn.
Auch der Trüffelton ist nicht für jeden Gaumen ein Gewinn. Wer den erdigen Pilzgeschmack grundsätzlich meidet, wird ihn hier in jedem Bissen wiederfinden.
Zwei Teelöffel kalt, niemals mitgekocht
Die richtige Dosierung liegt bei ein bis zwei Teelöffeln je Portion. Der Geschmack trägt weit, und eine größere Menge kippt schnell von interessant nach aufdringlich.
Zu selbst gemachten Pommes und Kartoffelecken ist er der naheliegende Griff. Ein Klecks am Tellerrand reicht für die ganze Portion, weil jeder Bissen den Trüffel mitnimmt.
Auf einem kurz gebratenen Steak ersetzt ein Teelöffel die ganze Sauce. Kaltes Roastbeef, Rindertatar und ein Toast mit Spiegelei vertragen ihn ebenso gut.
In der Pfanne gebratene Gnocchi bekommen ihn erst auf dem Teller, nicht in der Pfanne. Dasselbe gilt für Ofenblumenkohl, Polenta und Süßkartoffelspalten.
Für einen Dip genügen zwei Zutaten. Ein Teelöffel Ketchup unter zwei Esslöffel Mayonnaise gerührt ergibt in einer Minute eine Sauce für Fondue, Raclette oder Fingerfood.
Auch ein Burger profitiert, wenn der Belag zurückhaltend bleibt. Neben Bacon, eingelegten Gurken und scharfem Senf geht der Trüffel dagegen unter.
Für ein Abendessen unter der Woche reicht eine Pfanne. Kartoffelscheiben in Butter goldbraun braten, ein Spiegelei darauf, einen Teelöffel Ketchup daneben.
Zu Pasta sollte er nur mit heller Begleitung kommen. Eine Nudel mit Butter und Parmesan trägt ihn, eine Tomatensauce stellt ihn dagegen ins Abseits.
Ein Detail am Rande: Erhitzen Sie den Ketchup nicht. Die Duftstoffe des Trüffels sind flüchtig und verschwinden binnen weniger Minuten aus einer köchelnden Sauce.
Klassisch gewürzt bleibt derselbe Teller mit dem stückigen Tomatenketchup. Deutlich fruchtiger fällt er mit dem Bananen-Ketchup aus.
Was auf einem Trüffelöl-Etikett wirklich steht
Trüffelöl ist nicht gleich Trüffelöl, und der Unterschied steht in der Klammer hinter dem Wort. Dort trennt sich, was aus dem Wald kommt, von dem, was aus dem Labor stammt.
Viele Öle im Handel arbeiten mit einem Aromastoff, der den Leitduft des Trüffels nachbildet. Er ist zulässig und günstig, muss aber als Aroma deklariert werden.
Im Trüffelöl dieser Rezeptur stehen Sonnenblumenöl, Trüffelscheiben, Speisesalz und Pilzextrakt. Ein Aroma taucht in der Aufzählung nicht auf, und genau das ist die Information, auf die es ankommt.
Der Duft des Trüffels ist dabei ausgesprochen instabil. Eine frische Knolle verliert innerhalb weniger Tage einen großen Teil ihrer Aromatik, auch bei sorgfältiger Lagerung.
Verantwortlich dafür sind schwefelhaltige Duftmoleküle mit sehr niedrigem Siedepunkt. Sie sind der Grund, warum ein Trüffelgericht in der Küche schon riecht, bevor der Teller den Tisch erreicht.
Dieselbe Flüchtigkeit erklärt eine alte Regel der gehobenen Küche. Trüffel kommt immer zuletzt auf das Gericht, nie in den Topf, und dieser Ketchup folgt derselben Logik.
Ein Öl ist deshalb die praktikable Form für ein Glas, das monatlich im Regal steht. Es hält den Duft fest, den eine geriebene Knolle in einer Tomatenmasse längst verloren hätte.
Bei Ryan's Specialties in Augsburg ist dieses Glas die einzige Rezeptur der Reihe mit einem nennenswerten Fettanteil. Alle übrigen Saucen des Hauses kommen ohne Öl aus.
Das erklärt zwei Besonderheiten. Der Zucker wurde gegenüber dem klassischen Ketchup halbiert, und der Tomatenanteil stieg auf zusammen 60 Prozent, damit die Frucht gegen das Öl bestehen kann.
Ein praktischer Hinweis folgt daraus. Setzt sich nach längerem Stehen ein feiner Ölfilm ab, genügt kurzes Umrühren, und der Ansatz ist wieder gebunden.
Ein Ketchup, der wie ein Würzöl dosiert wird
Zwischen Ketchup und Trüffelprodukt liegt eine Lücke, die dieses Glas ausfüllt. Eine Trüffelbutter oder eine Trüffelcreme ist teuer und schnell verbraucht, ein Ketchup dagegen alltagstauglich.
Der Unterschied zeigt sich in der Handhabung. Ein gewöhnlicher Ketchup wird in Esslöffeln verwendet, dieser hier eher in Teelöffeln, ähnlich wie ein Würzöl.
Eine Einschränkung bleibt: Als Allzweckketchup für den Kühlschrank ist er nicht gedacht. Zu Currywurst, Nudelgerichten mit kräftiger Sauce und stark gewürztem Fleisch trägt er wenig bei.
Auch neben einem Salatdressing mit Essig ist er am falschen Platz. Säure von außen drückt den Trüffelton weg, statt ihn zu tragen.
Als Geschenk funktioniert das Glas für Menschen, die selbst kochen und Trüffel bislang für unbezahlbar hielten. Zusammen mit einer Tüte fester Kartoffeln ergibt das ein vollständiges Mitbringsel.

Die Marke bündelt, was in der Küche der Südstaaten und der amerikanischen Ostküste auf dem Tisch steht: Barbecuesaucen mit Melasse, Honig oder geräucherter Chipotle, fruchtige Fine Pairings für die Käseplatte, Ketchup jenseits der Standardflasche und Honig-Senf für Wings und Dressings.
Gekocht wird in Europa, nach Rezepturen mit amerikanischer Handschrift. Die Saucen kommen in der schlanken Glasflasche zu 260 Millilitern, die Fine Pairings im 230-Gramm-Glas. Auf jedem Etikett steht das Motto des Hauses: Crafted for the Love of Food.

How it all began
Does this sound familiar? You return from vacation with a bottle of olive oil from Portugal in your suitcase, a jar of fruit spread from South Tyrol, perhaps a bar of chocolate from a small factory in France — and you ask yourself: Why can't I find something like this easily at home? We kept asking ourselves this question.
We are Kerstin and Stephan Uhlenbusch from Nordhorn, a city on the German-Dutch border. On our travels through Europe, we made the most wonderful culinary discoveries: mountain apple juices from the high altitudes of South Tyrol, Breton barrel butter, handmade pasta from Italy, French sea salt. It wasn't the big luxury products that fascinated us, but rather the honest, artisan-made foods from people who put their heart and soul into their products.
In 2002, we decided to turn this passion into our profession: to make good food accessible to everyone who cannot travel to the producers themselves. This is how our gourmet shipping business came into being — initially as a store in Nordhorn, soon after as one of the first gourmet online shops in Germany. Back then under the name nur Gutes (only good things) — today we continue it as ginussland.com. The ambition has remained the same: this is where good taste resides.
Who we are
What drives us is the same curiosity with which we started in 2002: finding out who truly makes good food. Over more than two decades, we have built a network — with producers, traders, restaurateurs, and culinary artisans from all over Europe.
Kerstin was the managing director of the association of leading delicatessen merchants in Germany — the industry association of the country's best owner-managed delicatessen stores. In this role, she not only accompanied but actively shaped the German delicatessen industry. With the deli Festival, we also launched our own B2B trade fair for delicacies, which brought together producers, traders, and restaurateurs from all over Europe. The festival no longer exists today — but the relationships that arose from it still accompany us.
What does this mean for you? We know our industry like almost no one else. Chambers of commerce and economic development agencies from all over Europe repeatedly introduce us to exciting producers who want to offer their products on the German market. This way, genussland always offers something you won't find in any supermarket and hardly in any other shop.

An extra virgin olive oil from Portugal, a genuine Aceto Balsamico from Modena, Fleur de Sel from the Breton coast, hand-mixed spice blends. Fruit spreads, aromatic honey, truffle delicacies, chutneys, and mustard sauces. Vintage sardines and fine canned fish, risotto rice, and handmade pasta — basic ingredients for honest cooking and specialties for special moments.
Our fresh delivery service brings the legendary Beurre Bordier from Brittany, Italian Burrata, and fine salami to your home — securely packaged and continuously chilled.
Wine is particularly close to our hearts: white wine from Rheinhessen and the Pfalz, red wine from Austria and Burgenland, rosé for barbecue season, natural wine for the adventurous, sparkling wine and champagne for special moments. Not from all over the world — but from winemakers we have personally visited and whose work we appreciate. Many of them work organically or biodynamically.
Our Philosophy
What makes a product a genussland product? We ask ourselves this question for every single item we add to our range. The answer is never one-dimensional – it's the combination of craftsmanship, origin, ingredients, and the people behind them.
We ask many questions before a product finds its way into our shop. How is it made? Where do the raw materials come from? What philosophy does the manufacturer pursue? We quickly notice whether we are hearing marketing clichés or if a producer is happy to explain their journey. It is precisely this enthusiasm that we seek – and repeatedly find.
Craftsmanship. We prefer products from small manufactories and family businesses that often produce their culinary treasures by hand for generations. The careful processing and artisanal skill can be tasted in every bite.
Best Ingredients. For us, good quality begins with the raw materials. Whether it's fruit, vegetables, milk, meat, or grain – we ensure that our manufacturers rely on first-class, as natural as possible, ingredients. Many of our producers are organically certified; our shop itself is organically controlled under the number DE-ÖKO-037.
Origin and Regionality. We appreciate products with a clear regional identity. A South Tyrolean mountain apple juice made from slowly ripened, old apple varieties. A Portuguese olive oil from trees that have shaped the landscape for centuries. These stories of origin make delicacies what they are.
Personal relationship with the manufacturer. We have known many of our suppliers personally for years, some for over two decades. We visit them, taste together, and exchange ideas. This proximity guarantees transparency and trust.
At the end of the day, it has to taste good. We try all products ourselves – not just once, but again and again while cooking, at the table, on the plate. Only what convinces us personally finds its way into the shop.

What brings us the most joy: We get to accompany passionate individuals on their journey. People whose drive it is to make a good product even better. Some have been with us since our founding - for over twenty years.
There's the South Tyrolean fruit farmer who presses mountain apple juice from old, slowly ripened apple varieties, unlike anything else. The Italian balsamic family who ages their vinegar in Modena for decades. The Breton butter manufactory whose hand-churned butter is on the menu of the best restaurants in Europe. The Danish licorice pioneer who reinvented a centuries-old specialty.
Behind every product in our shop stands a person, a family, a story. And it is precisely these stories that make the difference between an interchangeable food item and a true delicacy.

International Shipping Costs
We are also happy to ship your orders to many European countries such as Austria, Netherlands, Belgium, Luxembourg, France, Spain, Portugal. Here, a minimum order value of 50 € applies. There is no free-delivery value. No shipping of products subject to excise duty (alcohol). Gross prices are adjusted to the individual VAT rates of the respective country. Sales tax will be charged in any case. The shipping price will be calculated at checkout and displayed before the order.
For international deliveries, shipping costs are calculated per package. (Maximum 18 bottles per package or 25kg). Shipping to certain areas or islands may incur additional costs, which we will inform you of before shipping. Remote areas cannot be supplied. No freight forwarding to islands.
For international deliveries, providing the recipient's telephone number with the order is mandatory. (The specification of a telephone number is obligatory for orders abroad.)
Alcohol
Alcohol is only shipped to adults via UPS or DHL; the delivery person will verify age upon delivery. By ordering alcohol, you also confirm that you or the recipient are of legal age.
Shipping Service
For manual creation of shipping labels (for orders by phone, email, or by submitting addresses via spreadsheet), we charge an additional 2.50 € per shipping label for this service, in addition to the stated shipping costs.

Investigation of failed payments
For the investigation and refund of payments incorrectly made to us, we charge a processing fee of 5.00 €.
