Farmhouse Ketchup ist ein stückiger Tomatenketchup von Easton Reed mit eingelegter Paprika, Zimt und Nelke im 280-Milliliter-Glas. Keine glatte Standardsauce, keine Schärfe, kein Ersatz für Tomatenmark im Topf.
Farmhouse Ketchup ist der Würzketchup von Easton Reed, dessen Tomatenanteil sich auf 30 Prozent Tomatenstücke und 15 Prozent Tomatenmark verteilt. Die Kartoffeln sind selbst geschnitten, das Fleisch kommt vom Metzger.
Daneben steht dann eine Flasche, deren Inhalt nach Zucker und Essig schmeckt und sonst nach wenig. Der Aufwand auf dem Teller endet an der Stelle, an der die Sauce beginnt.
Genau dort setzt dieses Glas an. Es liefert eine eigene Würzung, statt nur rot zu sein, und es bleibt dabei erkennbar ein Ketchup.
Die Nelke zeigt sich erst beim zweiten Löffel
Der erste Eindruck ist Tomate, und zwar die von frischer Frucht statt aus dem Konzentratkanister. Der Ketchup fällt in Klecksen aus dem Glas und läuft auf dem Teller kaum auseinander.
Diese Dichte hat einen sichtbaren Grund. Tomatenstücke bringen Fruchtfleisch und damit Struktur mit, während ein Ketchup aus reinem Mark nur eingedickte Flüssigkeit ist.
Nach der Tomate schiebt sich die eingelegte Paprika nach vorn. Mit zehn Prozent bringt sie eine milde, beinahe fruchtige Süße mit, dazu die leichte Säure ihrer Lake.
Darunter liegen getrocknete Zwiebelringe mit drei Prozent und getrocknete Paprika. Beide liefern den herzhaften Boden und eine leise Röstnote, die frische Zwiebel an dieser Stelle nicht hinbekommt.
Zimt und Nelke kommen zuletzt und bleiben knapp unterhalb der Wiedererkennung. Sie schmecken nicht nach Weihnachtsgebäck, sondern setzen eine warme, leicht harzige Tiefe hinter die Frucht.
Rohrzucker steht an zweiter Stelle der Rezeptur und arbeitet trotzdem im Hintergrund. Mit 26 Gramm Zucker je 100 Gramm liegt das Glas im üblichen Bereich seiner Gattung.
Das Chilipulver bleibt weit unter der Schwelle, an der Schärfe spürbar wird. Wer eine scharfe Sauce erwartet, wird hier nichts finden, was diesen Namen verdient.
Auch die Konsistenz ist eine Festlegung. Wer einen glatten, gießfähigen Ketchup aus der Quetschflasche gewohnt ist, wird dieses Glas als zu grob empfinden.
Auch die Nelke ist keine Nebensache für jeden Gaumen. Wer ihren Ton aus Sauerbraten oder Rotkohl grundsätzlich meidet, wird ihn hier wiedererkennen und stören.
Ein Löffel im Schmortopf ersetzt Mark und Gewürz
Der naheliegende Platz ist die Schale neben Pommes und Kartoffelspalten. Weil der Ketchup dick bleibt, rutscht er nicht ab, und ein Esslöffel je Person reicht aus.
Auf Burger, Hot Dog und Bratwurst gehört ein dünner Strich, mehr nicht. Neben Röstzwiebeln und Senf hat er genug Eigenwürze, um nicht unterzugehen.
Zu Bratkartoffeln, Rührei und Frikadellen ersetzt er die Sauce vollständig. Auch kalter Braten und ein Stück Käse auf dunklem Brot vertragen ihn ohne weitere Zutat.
Seine unterschätzte Rolle liegt im Topf. Zwei Esslöffel in eine Bolognese oder ein Chili con Carne bringen Tomate, Zwiebel, Essig und Gewürz in einem Schritt.
Für eine schnelle Grillmarinade genügen drei Zutaten. Drei Esslöffel Ketchup, ein Esslöffel Öl und ein Teelöffel Apfelessig reichen für 500 Gramm Hähnchenschenkel.
In einer Rindersuppe oder einem Gulasch ersetzt ein Esslöffel das Tomatenmark. Rechnen Sie dabei die Süße mit und salzen Sie erst am Ende nach.
Für einen schnellen Dip lohnt eine Mischung. Zwei Esslöffel Ketchup und zwei Esslöffel Schmand ergeben eine milde Sauce für Ofengemüse und Kartoffelecken.
Kalt bleibt er dabei stets die bessere Wahl. Aus dem Kühlschrank wirkt er verschlossen, bei Raumtemperatur kommen Paprika und Nelke deutlicher durch.
Unser Tipp: Rühren Sie den Ketchup nicht schon zu Beginn einer langen Schmorzeit ein. Zimt und Nelke werden bei Hitze über eine Stunde bitter und drängen sich dann nach vorn.
Feiner und erdiger fällt derselbe Teller mit dem Trüffel-Ketchup aus. Fruchtig-süß wird es mit dem Bananen-Ketchup aus derselben Reihe.
Ketchup war zuerst eine Sauce ohne Tomate
Das Wort Ketchup stammt nicht aus Amerika, sondern aus dem südchinesischen Hokkien. Gemeint war eine gesalzene, vergorene Fischsauce, die über Handelswege nach Südostasien und weiter nach England kam.
In englischen Küchen des 18. Jahrhunderts wurde daraus eine ganze Familie von Würzsaucen. Es gab Pilz-Ketchup, Walnuss-Ketchup und Austern-Ketchup, alle dunkel, salzig und lange haltbar gekocht.
Die Tomate kam erst spät dazu und setzte sich im 19. Jahrhundert in Nordamerika durch. Was blieb, war die Gewürzung: Nelke, Zimt, Piment und Ingwer gehörten selbstverständlich dazu.
Diese Gewürze hatten damals eine doppelte Aufgabe. Sie gaben der Sauce Charakter und verlängerten zugleich ihre Haltbarkeit, was ohne Kühlung entscheidend war.
Erst die industrielle Abfüllung hat die Rezeptur auf Tomate, Zucker und Essig zusammengestrichen. Der Ketchup wurde vom Würzmittel zur Beilage, und die Gewürze verschwanden aus der Zutatenliste.
Farmhouse heißt Bauernhaus und meint genau diese ältere, kräftig gewürzte Machart. Der Name beschreibt keine Herkunft, sondern eine Bauweise.
Bei Ryan's Specialties in Augsburg stehen drei Ketchups nebeneinander, und keiner davon ist der neutrale Standard. Dieser hier ist der konservativste der drei und tritt trotzdem aus der Reihe.
Die getrockneten Zwiebelringe sind dabei eine bewusste Entscheidung des Hauses. Getrocknete Zwiebel bringt kein zusätzliches Wasser mit und zieht sich beim Kochen mit dem Tomatensaft wieder voll.
Sie schmeckt danach nach Zwiebel und zugleich nach Tomate, weil sie deren Flüssigkeit aufgenommen hat. Frische Zwiebel würde die Sauce dagegen verdünnen und beim Einkochen an Kontur verlieren.
Ein Ketchup, der auch als Würzmittel taugt
Mit 2,4 Gramm Salz je 100 Gramm liegt dieses Glas deutlich über dem, was ein Kinderteller-Ketchup mitbringt. Das ist keine Nachlässigkeit, sondern die Konsequenz aus seiner Bauart.
Salz ist hier das Bindeglied zwischen Frucht, Paprika und Gewürz. Ohne diesen Anteil würden Zimt und Nelke einzeln stehen, statt sich mit der Tomate zu verbinden.
Daraus folgt eine Einschränkung für die Küche. Wer den Ketchup in eine Sauce rührt, sollte das Salzen danach neu bewerten, sonst wird das Ergebnis schnell zu kräftig.
Für Kinder, die einen milden, süßen Ketchup gewohnt sind, ist er ebenfalls nicht die naheliegende Wahl. Die Gewürztiefe fällt auf, und sie lässt sich nicht wegrühren.
Sein Platz ist deshalb eher der Tisch für Erwachsene. Dort ersetzt ein Glas dieser Bauart gleich mehrere Fläschchen, weil es Frucht, Süße, Säure und Gewürz gleichzeitig mitbringt.
Angebrochen gehört es in den Kühlschrank und hält sich dort mehrere Wochen. Rühren Sie vor dem ersten Löffel kurz um, damit sich die Stücke wieder gleichmäßig verteilen.
Als Mitbringsel funktioniert das Glas neben einer Tüte guter Kartoffeln oder einem Stück Rinderhack vom Metzger. Wer das ganze Regal sehen möchte, findet es bei Ketchup und Relish.

Gekocht wird in Europa, nach Rezepturen mit amerikanischer Handschrift. Die Saucen kommen in der schlanken Glasflasche zu 260 Millilitern, die Fine Pairings im 230-Gramm-Glas. Auf jedem Etikett steht das Motto des Hauses: Crafted for the Love of Food.

How it all began
Does this sound familiar? You return from vacation with a bottle of olive oil from Portugal in your suitcase, a jar of fruit spread from South Tyrol, perhaps a bar of chocolate from a small factory in France — and you ask yourself: Why can't I find something like this easily at home? We kept asking ourselves this question.
We are Kerstin and Stephan Uhlenbusch from Nordhorn, a city on the German-Dutch border. On our travels through Europe, we made the most wonderful culinary discoveries: mountain apple juices from the high altitudes of South Tyrol, Breton barrel butter, handmade pasta from Italy, French sea salt. It wasn't the big luxury products that fascinated us, but rather the honest, artisan-made foods from people who put their heart and soul into their products.
In 2002, we decided to turn this passion into our profession: to make good food accessible to everyone who cannot travel to the producers themselves. This is how our gourmet shipping business came into being — initially as a store in Nordhorn, soon after as one of the first gourmet online shops in Germany. Back then under the name nur Gutes (only good things) — today we continue it as ginussland.com. The ambition has remained the same: this is where good taste resides.
Who we are
What drives us is the same curiosity with which we started in 2002: finding out who truly makes good food. Over more than two decades, we have built a network — with producers, traders, restaurateurs, and culinary artisans from all over Europe.
Kerstin was the managing director of the association of leading delicatessen merchants in Germany — the industry association of the country's best owner-managed delicatessen stores. In this role, she not only accompanied but actively shaped the German delicatessen industry. With the deli Festival, we also launched our own B2B trade fair for delicacies, which brought together producers, traders, and restaurateurs from all over Europe. The festival no longer exists today — but the relationships that arose from it still accompany us.
What does this mean for you? We know our industry like almost no one else. Chambers of commerce and economic development agencies from all over Europe repeatedly introduce us to exciting producers who want to offer their products on the German market. This way, genussland always offers something you won't find in any supermarket and hardly in any other shop.

An extra virgin olive oil from Portugal, a genuine Aceto Balsamico from Modena, Fleur de Sel from the Breton coast, hand-mixed spice blends. Fruit spreads, aromatic honey, truffle delicacies, chutneys, and mustard sauces. Vintage sardines and fine canned fish, risotto rice, and handmade pasta — basic ingredients for honest cooking and specialties for special moments.
Our fresh delivery service brings the legendary Beurre Bordier from Brittany, Italian Burrata, and fine salami to your home — securely packaged and continuously chilled.
Wine is particularly close to our hearts: white wine from Rheinhessen and the Pfalz, red wine from Austria and Burgenland, rosé for barbecue season, natural wine for the adventurous, sparkling wine and champagne for special moments. Not from all over the world — but from winemakers we have personally visited and whose work we appreciate. Many of them work organically or biodynamically.
Our Philosophy
What makes a product a genussland product? We ask ourselves this question for every single item we add to our range. The answer is never one-dimensional – it's the combination of craftsmanship, origin, ingredients, and the people behind them.
We ask many questions before a product finds its way into our shop. How is it made? Where do the raw materials come from? What philosophy does the manufacturer pursue? We quickly notice whether we are hearing marketing clichés or if a producer is happy to explain their journey. It is precisely this enthusiasm that we seek – and repeatedly find.
Craftsmanship. We prefer products from small manufactories and family businesses that often produce their culinary treasures by hand for generations. The careful processing and artisanal skill can be tasted in every bite.
Best Ingredients. For us, good quality begins with the raw materials. Whether it's fruit, vegetables, milk, meat, or grain – we ensure that our manufacturers rely on first-class, as natural as possible, ingredients. Many of our producers are organically certified; our shop itself is organically controlled under the number DE-ÖKO-037.
Origin and Regionality. We appreciate products with a clear regional identity. A South Tyrolean mountain apple juice made from slowly ripened, old apple varieties. A Portuguese olive oil from trees that have shaped the landscape for centuries. These stories of origin make delicacies what they are.
Personal relationship with the manufacturer. We have known many of our suppliers personally for years, some for over two decades. We visit them, taste together, and exchange ideas. This proximity guarantees transparency and trust.
At the end of the day, it has to taste good. We try all products ourselves – not just once, but again and again while cooking, at the table, on the plate. Only what convinces us personally finds its way into the shop.

What brings us the most joy: We get to accompany passionate individuals on their journey. People whose drive it is to make a good product even better. Some have been with us since our founding - for over twenty years.
There's the South Tyrolean fruit farmer who presses mountain apple juice from old, slowly ripened apple varieties, unlike anything else. The Italian balsamic family who ages their vinegar in Modena for decades. The Breton butter manufactory whose hand-churned butter is on the menu of the best restaurants in Europe. The Danish licorice pioneer who reinvented a centuries-old specialty.
Behind every product in our shop stands a person, a family, a story. And it is precisely these stories that make the difference between an interchangeable food item and a true delicacy.

International Shipping Costs
We are also happy to ship your orders to many European countries such as Austria, Netherlands, Belgium, Luxembourg, France, Spain, Portugal. Here, a minimum order value of 50 € applies. There is no free-delivery value. No shipping of products subject to excise duty (alcohol). Gross prices are adjusted to the individual VAT rates of the respective country. Sales tax will be charged in any case. The shipping price will be calculated at checkout and displayed before the order.
For international deliveries, shipping costs are calculated per package. (Maximum 18 bottles per package or 25kg). Shipping to certain areas or islands may incur additional costs, which we will inform you of before shipping. Remote areas cannot be supplied. No freight forwarding to islands.
For international deliveries, providing the recipient's telephone number with the order is mandatory. (The specification of a telephone number is obligatory for orders abroad.)
Alcohol
Alcohol is only shipped to adults via UPS or DHL; the delivery person will verify age upon delivery. By ordering alcohol, you also confirm that you or the recipient are of legal age.
Shipping Service
For manual creation of shipping labels (for orders by phone, email, or by submitting addresses via spreadsheet), we charge an additional 2.50 € per shipping label for this service, in addition to the stated shipping costs.

Investigation of failed payments
For the investigation and refund of payments incorrectly made to us, we charge a processing fee of 5.00 €.
