Émietté de Thon Marie Galante ist zerpflückter weißer Thunfisch von la belle-iloise in nativem Olivenöl extra mit Limette, Kokosnuss, roter Paprika und gerösteten Zwiebeln. Kein glatter Aufstrich, kein Thunfisch in Lake, kein Filet am Stück und keine Dose für Gäste, die Fisch ohne Fruchtnoten erwarten.
Émietté de Thon Marie Galante ist eine Thunfischkonserve von la belle-iloise aus Quiberon, benannt nach einer kleinen Insel der Antillen. Unter den Émiettés des Hauses ist sie die fruchtigste. Der Émietté in Olivenöl bleibt pur, die Luzienne setzt auf Tomate und Paprika, der Zanzibar auf Gewürze und Backpflaume. Marie Galante geht in Richtung Karibik: Limette vorn, Kokos dahinter, Paprika als Farbe und Süße. Wer die Reihe kennt, findet hier die hellste, sonnigste Stimme.
Limette und Kokos an einem Fisch, der beides trägt
Weißer Thunfisch ist mild, hell und blättrig, und genau deshalb verträgt er Limette und Kokosnuss, ohne darunter zu verschwinden. Der erste Eindruck ist Säure, schärfer und bitterer als Zitrone, mit dem typischen Duft der Limettenschale. Dann folgt die Kokosnuss, weich und leicht süß, die die Säure abrundet.
Die rote Paprika bringt Farbe und eine milde Gemüsesüße, die gerösteten Zwiebeln eine dunkle, fast karamellige Tiefe. Rosinen setzen vereinzelt süße Punkte. Das Olivenöl hält alles zusammen und gibt der Mischung einen fruchtigen Boden.
Der Fisch selbst bleibt in Stücken erkennbar. Seine Fasern lösen sich in Schichten, sind zart und saftig, und sie nehmen die Würze von allen Seiten an, weil zwischen den Stücken Platz für Öl und Gemüse bleibt.
Im Vergleich zum Zanzibar aus derselben Reihe ist Marie Galante heller und säurebetonter, während der Zanzibar dunkler, würziger und süßer ausfällt. Beide arbeiten mit Frucht, aber die eine mit Limette, der andere mit Backpflaume. Wer beide probiert, versteht die Bandbreite dieser Machart.
Wer klassischen Thunfisch mit nichts als Öl und Salz erwartet, wird diese Dose als zu süß und zu fruchtig empfinden. Für ein Thunfischsandwich mit Mayonnaise ist sie nicht geeignet, weil die Limette gegen die Mayonnaise arbeitet.
Auf Blini, im Reis, in der Avocado
Ein Émietté mit Limette und Kokos passt am besten zu neutralen Trägern, die seine Würze aufnehmen, statt mit ihr zu konkurrieren. Verteilen Sie den Inhalt auf acht lauwarme Blini oder auf Scheiben gerösteten Weißbrots, und der Aperitif für vier Personen steht ohne weitere Vorbereitung auf dem Tisch.
Für eine Reisschale kochen Sie 150 Gramm Basmatireis, lassen ihn lauwarm abkühlen und heben den Inhalt einer Dose samt Öl unter. Frischer Koriander, ein paar Gurkenwürfel und ein Spritzer Limettensaft obendrauf ergeben ein Mittagessen für eine Person.
Halbieren Sie eine reife Avocado, entfernen Sie den Kern und füllen Sie die Mulden mit dem Émietté. Ein wenig Fleur de Sel und schwarzer Pfeffer, mehr braucht diese Vorspeise nicht. Die Kokosnuss der Dose und das Fett der Avocado ergänzen sich, ohne schwer zu werden.
Für einen schnellen Salat mischen Sie eine Dose mit einer Handvoll Rucola, einer halben Mango in Würfeln und ein paar gerösteten Cashewkernen. Ein Löffel des Öls aus der Dose reicht als Dressing, Essig brauchen Sie keinen, die Limette übernimmt das.
Auch als Füllung für Maistortillas mit Weißkohl und Limette funktioniert die Dose, dann für zwei Personen. In warmen Gerichten mit langer Garzeit hat sie dagegen nichts verloren: Die Limette wird bitter, und die feinen Fischstücke zerfallen.
Gut zu wissen: Öffnen Sie die Dose eine Viertelstunde vor dem Essen und rühren Sie den Inhalt einmal durch. Das Öl sammelt sich beim Lagern oben, die Gemüsestücke unten. Erst durchgerührt hat jeder Bissen Fisch, Paprika und Kokos zugleich.
Ein Fisch aus dem Golf von Biskaya, ein Name von den Antillen
Der weiße Thunfisch, in Frankreich Germon genannt, wird im Sommer von bretonischen Booten im Golf von Biskaya gefangen. Unter Kennern gilt er als die feinste Thunfischart. Sein Fleisch ist heller und milder als das des Gelbflossenthuns und zerfällt gegart in große, weiche Flocken. Für ein Émietté ist das die ideale Grundlage.
Émietté bedeutet zerkrümelt, und der Begriff beschreibt eine Machart, die la belle-iloise über Jahrzehnte verfeinert hat. Statt ganzer Filets werden die gegarten Stücke des Thunfischs mit Gemüse, Früchten und Öl in die Dose gegeben. Die Würze durchdringt den Fisch dadurch von allen Seiten und nicht nur an der Oberfläche.
Marie-Galante liegt südöstlich von Guadeloupe und ist eine der ruhigsten Inseln der Antillen, bekannt für Zuckerrohr, Windmühlen und Rum. Kokos, Limette und Paprika sind dort alltägliche Zutaten. La belle-iloise hat die Insel als Namensgeberin gewählt, weil die Zutatenliste dieser Dose sich wie eine Speisekarte von dort liest.
Der Germon wird nach dem Fang gekocht, von Hand von Haut und Gräten befreit und in Stücke gepflückt. Erst dann kommen Gemüse, Limettensaft, Kokos und Olivenöl dazu. Diese Reihenfolge ist wichtig, weil der Fisch die Würze nur aufnimmt, wenn er bereits gegart und offenfaserig ist.
Die Dose selbst entsteht wie alle Konserven des Hauses in Quiberon. Nach dem Befüllen wird sie verschlossen und sterilisiert, wodurch sich Öl, Saft und Fisch verbinden und die Konserve ohne Kühlung mehrere Jahre hält. Die Limette verliert dabei nichts von ihrer Frische, weil die Dose luftdicht bleibt.
Die Dose für Gäste, die Thunfisch für langweilig halten
Innerhalb der Émietté-Reihe ist Marie Galante die Rezeptur mit der klarsten Handschrift, weil Limette und Kokos sofort erkennbar sind. Sie eignet sich für Menschen, die Thunfischkonserven bisher mit Lake und Kantine verbunden haben und eines Besseren belehrt werden wollen.
Bei einem Aperitif mit mehreren Dosen gehört sie an den Anfang, weil ihre Säure den Gaumen öffnet und kräftigere Sardinen danach besser zur Geltung kommen. Wer sie ans Ende stellt, nimmt ihr die Wirkung.
Als Mitbringsel passt sie zu einer Flasche Weißwein mit Frucht, etwa einem Riesling oder einem Chenin Blanc von der Loire. Ein trockener Rosé steht ihr ebenfalls gut. Rotwein und Bier verträgt die Limette weniger.
Mit 80 Gramm ist die Dose bewusst klein und reicht für zwei belegte Brote oder eine Portion Reis. Ungeöffnet lagert sie mehrere Jahre, angebrochene Reste kommen abgedeckt in den Kühlschrank und halten dort ein bis zwei Tage.
Ein Thunfisch, der nach Insel schmeckt und trotzdem aus dem Atlantik kommt.

How it all began
Does this sound familiar? You return from vacation with a bottle of olive oil from Portugal in your suitcase, a jar of fruit spread from South Tyrol, perhaps a bar of chocolate from a small factory in France — and you ask yourself: Why can't I find something like this easily at home? We kept asking ourselves this question.
We are Kerstin and Stephan Uhlenbusch from Nordhorn, a city on the German-Dutch border. On our travels through Europe, we made the most wonderful culinary discoveries: mountain apple juices from the high altitudes of South Tyrol, Breton barrel butter, handmade pasta from Italy, French sea salt. It wasn't the big luxury products that fascinated us, but rather the honest, artisan-made foods from people who put their heart and soul into their products.
In 2002, we decided to turn this passion into our profession: to make good food accessible to everyone who cannot travel to the producers themselves. This is how our gourmet shipping business came into being — initially as a store in Nordhorn, soon after as one of the first gourmet online shops in Germany. Back then under the name nur Gutes (only good things) — today we continue it as ginussland.com. The ambition has remained the same: this is where good taste resides.
Who we are
What drives us is the same curiosity with which we started in 2002: finding out who truly makes good food. Over more than two decades, we have built a network — with producers, traders, restaurateurs, and culinary artisans from all over Europe.
Kerstin was the managing director of the association of leading delicatessen merchants in Germany — the industry association of the country's best owner-managed delicatessen stores. In this role, she not only accompanied but actively shaped the German delicatessen industry. With the deli Festival, we also launched our own B2B trade fair for delicacies, which brought together producers, traders, and restaurateurs from all over Europe. The festival no longer exists today — but the relationships that arose from it still accompany us.
What does this mean for you? We know our industry like almost no one else. Chambers of commerce and economic development agencies from all over Europe repeatedly introduce us to exciting producers who want to offer their products on the German market. This way, genussland always offers something you won't find in any supermarket and hardly in any other shop.

An extra virgin olive oil from Portugal, a genuine Aceto Balsamico from Modena, Fleur de Sel from the Breton coast, hand-mixed spice blends. Fruit spreads, aromatic honey, truffle delicacies, chutneys, and mustard sauces. Vintage sardines and fine canned fish, risotto rice, and handmade pasta — basic ingredients for honest cooking and specialties for special moments.
Our fresh delivery service brings the legendary Beurre Bordier from Brittany, Italian Burrata, and fine salami to your home — securely packaged and continuously chilled.
Wine is particularly close to our hearts: white wine from Rheinhessen and the Pfalz, red wine from Austria and Burgenland, rosé for barbecue season, natural wine for the adventurous, sparkling wine and champagne for special moments. Not from all over the world — but from winemakers we have personally visited and whose work we appreciate. Many of them work organically or biodynamically.
Our Philosophy
What makes a product a genussland product? We ask ourselves this question for every single item we add to our range. The answer is never one-dimensional – it's the combination of craftsmanship, origin, ingredients, and the people behind them.
We ask many questions before a product finds its way into our shop. How is it made? Where do the raw materials come from? What philosophy does the manufacturer pursue? We quickly notice whether we are hearing marketing clichés or if a producer is happy to explain their journey. It is precisely this enthusiasm that we seek – and repeatedly find.
Craftsmanship. We prefer products from small manufactories and family businesses that often produce their culinary treasures by hand for generations. The careful processing and artisanal skill can be tasted in every bite.
Best Ingredients. For us, good quality begins with the raw materials. Whether it's fruit, vegetables, milk, meat, or grain – we ensure that our manufacturers rely on first-class, as natural as possible, ingredients. Many of our producers are organically certified; our shop itself is organically controlled under the number DE-ÖKO-037.
Origin and Regionality. We appreciate products with a clear regional identity. A South Tyrolean mountain apple juice made from slowly ripened, old apple varieties. A Portuguese olive oil from trees that have shaped the landscape for centuries. These stories of origin make delicacies what they are.
Personal relationship with the manufacturer. We have known many of our suppliers personally for years, some for over two decades. We visit them, taste together, and exchange ideas. This proximity guarantees transparency and trust.
At the end of the day, it has to taste good. We try all products ourselves – not just once, but again and again while cooking, at the table, on the plate. Only what convinces us personally finds its way into the shop.

What brings us the most joy: We get to accompany passionate individuals on their journey. People whose drive it is to make a good product even better. Some have been with us since our founding - for over twenty years.
There's the South Tyrolean fruit farmer who presses mountain apple juice from old, slowly ripened apple varieties, unlike anything else. The Italian balsamic family who ages their vinegar in Modena for decades. The Breton butter manufactory whose hand-churned butter is on the menu of the best restaurants in Europe. The Danish licorice pioneer who reinvented a centuries-old specialty.
Behind every product in our shop stands a person, a family, a story. And it is precisely these stories that make the difference between an interchangeable food item and a true delicacy.

Refrigerated Shipping
Our product range includes food items that react differently to heat. To ensure that every product arrives in perfect condition, we handle the shipping of two product groups with particular care.
Products requiring refrigeration
These items are marked with the note "kühlpflichtig" (requires refrigeration) in our shop — for example, Bordier butter, Parmigiano Reggiano from Cavola 993, Pancetta and Guanciale from Falorni, mountain herb ham and Tyrolean dumplings from Steiner, Prosciutto Crudo and truffle butter from Viani. We generally ship these products by express delivery with ice packs. They are only available via express shipping. The shipping costs will be clearly displayed before you complete your order at checkout.
Temperature-sensitive products
These items are marked with the note "temperaturempfindlich" (temperature-sensitive) — for example, salami and bacon specialties from Falorni and Steiner, as well as Goufrais cocoa confectionery. In cooler weather, they can be sent by standard shipping. In warmer weather, we switch the shipping to express shipping with ice packs before checkout — in this case, this shipping method is the only option, and the corresponding shipping costs will be displayed at checkout.
Shipping days for refrigerated and temperature-sensitive orders
To prevent any package from remaining in a distribution center over the weekend or public holidays, we only ship refrigerated orders from Monday to Thursday. Orders placed after Thursday will generally not be shipped until the following Monday. In summer, this rule also applies to temperature-sensitive products.
Packaging
Depending on the manufacturer, sausage and cheese specialties are supplied either vacuum-packed or traditionally without foil — for example, Italian salami from Falorni. If air is visible in a vacuum package upon delivery, this is not a quality defect. Please unpack the item and store it in the refrigerator, ideally wrapped in sausage paper or greaseproof paper.
Freight Forwarding
Freight forwarding is used for products that cannot be delivered as a package due to their size or weight. The selection is made automatically before completing the order. Please provide your phone number for scheduling the freight forwarding delivery.

Currently, we only ship within Germany. Shipping to Austria is in preparation — as soon as we can deliver there, you will find the details here.
Products subject to excise duty (alcohol) cannot be shipped to Austria.
Alcohol
Alcohol can only be shipped to adults. The deliverer will verify age upon delivery. By ordering alcohol, you also confirm that you or the recipient are of legal age.
