Sardinen mit Olivenöl und Tomate sind ganze bretonische Sardinen in einer gewürzten Tomatensauce, die mit nativem Olivenöl extra angereichert ist. Keine entgräteten Filets, keine neutrale Tomatensardine mit Sonnenblumenöl, keine Konserve für Gäste, die Sardinen nur pur mögen.
Sardinen mit Olivenöl und Tomate sind eine Fischkonserve von la belle-iloise, bei der Tomate und Olivenöl gemeinsam die Sauce bilden. Jeder kennt den Abend, an dem der Kühlschrank leer ist und der Wille zum Einkaufen ebenfalls. Nudelwasser aufsetzen, eine Dose öffnen, Sauce und Fisch mit dem Kochwasser verrühren, fertig. Diese Dose ist für genau diese Abende gemacht, und sie schmeckt dabei nicht nach Notlösung, sondern nach einer Küche an der französischen Küste.
Die Tomate führt, das Olivenöl antwortet im Abgang
Tomatensardinen mit Olivenöl unterscheiden sich von der klassischen Tomatensardine durch einen kräftigeren, dunkleren Ton, den das Öl im Nachgeschmack hinterlässt. Die Tomate steht vorn, rund und fruchtig, mit einer Säure, die ein Schuss Branntweinessig stützt. Dann kommt das native Olivenöl extra, grasig und leicht pfeffrig, und bleibt am Gaumen stehen.
Die Sardine selbst ist ganz, mit Gräte, und deshalb kräftiger im Geschmack als ein entgrätetes Filet. Ihr salziges, an Meer erinnerndes Aroma trägt die Sauce, ohne von ihr überdeckt zu werden. Kräuter im Hintergrund geben der Dose einen Hauch Süden, ohne dass eine einzelne Note hervorsticht.
Die Textur ist fest und saftig zugleich. Die Gräten sind durch die Sterilisation so weich, dass sie beim Essen nicht auffallen. Wer die milde, fast neutrale Art der Sardinen in Tomatensauce mit Sonnenblumenöl gewohnt ist, wird diese Dose als deutlich würziger empfinden.
Beim Öffnen fällt die Farbe auf: ein tiefes Ziegelrot mit grünlichem Schimmer am Rand, wo sich das Öl sammelt. Der Duft ist warm und würzig, mit Tomate, Kräutern und einem Hauch Fisch, der nie streng wird. Nach einigen Monaten Lagerung hat die Sauce den Fisch bis in die Mitte durchzogen.
Für Gäste, die Olivenöl nicht mögen, ist sie nicht geeignet, denn das Öl ist hier keine Beilage, sondern Teil der Rezeptur. Es prägt jeden Bissen.
Nudeln, Bruschetta und ein Eintopf in zwanzig Minuten
Eine Dose Sardinen mit Olivenöl und Tomate ergibt mit 200 Gramm Spaghetti eine vollständige Sauce für zwei Portionen. Zerdrücken Sie die Sardinen in einer warmen Pfanne mit der Sauce aus der Dose, geben Sie drei Löffel Nudelwasser dazu und heben Sie die abgegossenen Spaghetti unter. Gehackte Petersilie und Zitronenabrieb obendrauf, kein Parmesan.
Für eine Bruschetta rösten Sie vier Scheiben Landbrot, reiben sie mit einer halben Knoblauchzehe ab und legen je eine Sardine mit etwas Sauce darauf. Ein paar Kapern und ein Tropfen frisches Olivenöl reichen als Ergänzung.
Auch ein schneller Eintopf gelingt: Eine Zwiebel in Olivenöl anschwitzen, eine Dose weiße Bohnen samt Flüssigkeit dazugeben, zehn Minuten köcheln, dann die Sardinen samt Sauce unterrühren und nur noch erwärmen. Mit Brot ist das ein Abendessen für zwei Personen in zwanzig Minuten.
In einem Ofengericht aus geschnittenen Kartoffeln, Zwiebeln und Paprika lassen sich die Sardinen in den letzten fünf Minuten obenauf legen. Sie wärmen durch, ohne zu zerfallen, und ihre Sauce zieht in das Gemüse. Für ein Gericht mit vier Personen rechnen Sie zwei Dosen.
Unser Tipp: Erhitzen Sie die Sardinen nie über kleiner Flamme hinaus und rühren Sie so wenig wie möglich. Bei starker Hitze zerfallen die Fische zu Fasern, und die Sauce trennt sich vom Öl. Wer die Dose kalt isst, lässt sie eine Viertelstunde bei Zimmertemperatur stehen, damit das Olivenöl wieder klar wird.
Ein Klassiker aus der Zeit, als Quiberon von der Sardine lebte
Sardinen in Tomatensauce gehören zu den ältesten Rezepturen der bretonischen Konservenindustrie, weil Tomate den Fisch bereits im 19. Jahrhundert günstig haltbar machte und gleichzeitig würzte. Quiberon war um 1900 ein Zentrum dieser Industrie mit zahlreichen Fabriken am Hafen. Heute ist la belle-iloise die letzte Konservenfabrik der Halbinsel, und sie öffnet ihre Produktion für Besucher, die zusehen wollen, wie eine Dose entsteht.
Das Haus hat die Tomatensardine in zwei Richtungen weiterentwickelt: eine neutrale Variante mit Sonnenblumenöl und diese hier mit nativem Olivenöl extra. Die Entscheidung für das Olivenöl verändert nicht nur den Geschmack, sondern auch die Sauce selbst, die durch den höheren Fettanteil dichter und glänzender wird.
Olivenöl ist in der Bretagne kein heimisches Produkt. Dass es trotzdem in diese Dose gehört, liegt an der Handelsgeschichte der Sardinenfabriken, die ihr Öl schon im 19. Jahrhundert aus der Provence und aus Italien bezogen. Die Verbindung von atlantischem Fisch und mediterranem Öl ist also älter als die meisten heutigen Rezepte.
Die Herstellung folgt dem klassischen Ablauf. Die Sardinen werden nach dem Fang in Salzlake gefestigt, von Hand geputzt, kurz in Öl vorgegart und über Nacht abgetropft. Erst am nächsten Tag werden sie in die Dose gelegt, mit Sauce und Öl bedeckt und verschlossen.
Die Sterilisation der geschlossenen Dose bei rund 115 Grad erledigt drei Dinge auf einmal. Sie macht die Konserve jahrelang haltbar, sie erweicht die Gräten, und sie verbindet Tomatensauce und Olivenöl zu einer stabilen Emulsion. Ohne diesen Schritt würde das Öl in der Dose oben schwimmen und die Sauce am Boden liegen.
Die Vorratsdose, die keinen Vorrat schmecken lässt
Innerhalb des Sortiments von la belle-iloise ist diese Rezeptur die kräftigere der beiden Tomatensardinen und die vielseitigste für warme Küche. Sie eignet sich für alle, die Fischkonserven nicht nur auf Brot, sondern als Zutat in Pasta, Eintopf oder Reisgerichten einsetzen.
Als Geschenk passt sie zu Menschen, die gern kochen und wenig Zeit haben. Drei Dosen davon im Schrank ersetzen an schwachen Abenden den Lieferdienst. Zu einem Glas jungem Rotwein aus dem Languedoc oder einem Rosé von der Provence gehört sie eher als zu Weißwein, weil die Tomate Tannin verträgt.
Für ein Aperitif-Brett neben Oliven und Radieschen ist sie weniger geeignet als eine Ölsardine, weil die Sauce auf dem Brett verläuft. Ihre Stärke liegt in der Küche, nicht auf dem Stehtisch.
Ungeöffnet hält die Dose mehrere Jahre im dunklen Schrank. Reste kommen samt Sauce in ein Glas und werden innerhalb von zwei Tagen kalt oder in Pasta aufgebraucht.

How it all began
Does this sound familiar? You return from vacation with a bottle of olive oil from Portugal in your suitcase, a jar of fruit spread from South Tyrol, perhaps a bar of chocolate from a small factory in France — and you ask yourself: Why can't I find something like this easily at home? We kept asking ourselves this question.
We are Kerstin and Stephan Uhlenbusch from Nordhorn, a city on the German-Dutch border. On our travels through Europe, we made the most wonderful culinary discoveries: mountain apple juices from the high altitudes of South Tyrol, Breton barrel butter, handmade pasta from Italy, French sea salt. It wasn't the big luxury products that fascinated us, but rather the honest, artisan-made foods from people who put their heart and soul into their products.
In 2002, we decided to turn this passion into our profession: to make good food accessible to everyone who cannot travel to the producers themselves. This is how our gourmet shipping business came into being — initially as a store in Nordhorn, soon after as one of the first gourmet online shops in Germany. Back then under the name nur Gutes (only good things) — today we continue it as ginussland.com. The ambition has remained the same: this is where good taste resides.
Who we are
What drives us is the same curiosity with which we started in 2002: finding out who truly makes good food. Over more than two decades, we have built a network — with producers, traders, restaurateurs, and culinary artisans from all over Europe.
Kerstin was the managing director of the association of leading delicatessen merchants in Germany — the industry association of the country's best owner-managed delicatessen stores. In this role, she not only accompanied but actively shaped the German delicatessen industry. With the deli Festival, we also launched our own B2B trade fair for delicacies, which brought together producers, traders, and restaurateurs from all over Europe. The festival no longer exists today — but the relationships that arose from it still accompany us.
What does this mean for you? We know our industry like almost no one else. Chambers of commerce and economic development agencies from all over Europe repeatedly introduce us to exciting producers who want to offer their products on the German market. This way, genussland always offers something you won't find in any supermarket and hardly in any other shop.

An extra virgin olive oil from Portugal, a genuine Aceto Balsamico from Modena, Fleur de Sel from the Breton coast, hand-mixed spice blends. Fruit spreads, aromatic honey, truffle delicacies, chutneys, and mustard sauces. Vintage sardines and fine canned fish, risotto rice, and handmade pasta — basic ingredients for honest cooking and specialties for special moments.
Our fresh delivery service brings the legendary Beurre Bordier from Brittany, Italian Burrata, and fine salami to your home — securely packaged and continuously chilled.
Wine is particularly close to our hearts: white wine from Rheinhessen and the Pfalz, red wine from Austria and Burgenland, rosé for barbecue season, natural wine for the adventurous, sparkling wine and champagne for special moments. Not from all over the world — but from winemakers we have personally visited and whose work we appreciate. Many of them work organically or biodynamically.
Our Philosophy
What makes a product a genussland product? We ask ourselves this question for every single item we add to our range. The answer is never one-dimensional – it's the combination of craftsmanship, origin, ingredients, and the people behind them.
We ask many questions before a product finds its way into our shop. How is it made? Where do the raw materials come from? What philosophy does the manufacturer pursue? We quickly notice whether we are hearing marketing clichés or if a producer is happy to explain their journey. It is precisely this enthusiasm that we seek – and repeatedly find.
Craftsmanship. We prefer products from small manufactories and family businesses that often produce their culinary treasures by hand for generations. The careful processing and artisanal skill can be tasted in every bite.
Best Ingredients. For us, good quality begins with the raw materials. Whether it's fruit, vegetables, milk, meat, or grain – we ensure that our manufacturers rely on first-class, as natural as possible, ingredients. Many of our producers are organically certified; our shop itself is organically controlled under the number DE-ÖKO-037.
Origin and Regionality. We appreciate products with a clear regional identity. A South Tyrolean mountain apple juice made from slowly ripened, old apple varieties. A Portuguese olive oil from trees that have shaped the landscape for centuries. These stories of origin make delicacies what they are.
Personal relationship with the manufacturer. We have known many of our suppliers personally for years, some for over two decades. We visit them, taste together, and exchange ideas. This proximity guarantees transparency and trust.
At the end of the day, it has to taste good. We try all products ourselves – not just once, but again and again while cooking, at the table, on the plate. Only what convinces us personally finds its way into the shop.

What brings us the most joy: We get to accompany passionate individuals on their journey. People whose drive it is to make a good product even better. Some have been with us since our founding - for over twenty years.
There's the South Tyrolean fruit farmer who presses mountain apple juice from old, slowly ripened apple varieties, unlike anything else. The Italian balsamic family who ages their vinegar in Modena for decades. The Breton butter manufactory whose hand-churned butter is on the menu of the best restaurants in Europe. The Danish licorice pioneer who reinvented a centuries-old specialty.
Behind every product in our shop stands a person, a family, a story. And it is precisely these stories that make the difference between an interchangeable food item and a true delicacy.

Refrigerated Shipping
Our product range includes food items that react differently to heat. To ensure that every product arrives in perfect condition, we handle the shipping of two product groups with particular care.
Products requiring refrigeration
These items are marked with the note "kühlpflichtig" (requires refrigeration) in our shop — for example, Bordier butter, Parmigiano Reggiano from Cavola 993, Pancetta and Guanciale from Falorni, mountain herb ham and Tyrolean dumplings from Steiner, Prosciutto Crudo and truffle butter from Viani. We generally ship these products by express delivery with ice packs. They are only available via express shipping. The shipping costs will be clearly displayed before you complete your order at checkout.
Temperature-sensitive products
These items are marked with the note "temperaturempfindlich" (temperature-sensitive) — for example, salami and bacon specialties from Falorni and Steiner, as well as Goufrais cocoa confectionery. In cooler weather, they can be sent by standard shipping. In warmer weather, we switch the shipping to express shipping with ice packs before checkout — in this case, this shipping method is the only option, and the corresponding shipping costs will be displayed at checkout.
Shipping days for refrigerated and temperature-sensitive orders
To prevent any package from remaining in a distribution center over the weekend or public holidays, we only ship refrigerated orders from Monday to Thursday. Orders placed after Thursday will generally not be shipped until the following Monday. In summer, this rule also applies to temperature-sensitive products.
Packaging
Depending on the manufacturer, sausage and cheese specialties are supplied either vacuum-packed or traditionally without foil — for example, Italian salami from Falorni. If air is visible in a vacuum package upon delivery, this is not a quality defect. Please unpack the item and store it in the refrigerator, ideally wrapped in sausage paper or greaseproof paper.
Freight Forwarding
Freight forwarding is used for products that cannot be delivered as a package due to their size or weight. The selection is made automatically before completing the order. Please provide your phone number for scheduling the freight forwarding delivery.

Currently, we only ship within Germany. Shipping to Austria is in preparation — as soon as we can deliver there, you will find the details here.
Products subject to excise duty (alcohol) cannot be shipped to Austria.
Alcohol
Alcohol can only be shipped to adults. The deliverer will verify age upon delivery. By ordering alcohol, you also confirm that you or the recipient are of legal age.
