Aceto Balsamico di Modena IGP Platinum ist die dichteste IGP-Stufe der Acetaia Malpighi aus 90 % eingekochtem Traubenmost und 10 % Weinessig, lange gereift in Rovere-Barriques. Er kommt im Karton mit Dosierausgießer. Kein Tradizionale DOP, keine Crema mit Stärke, kein Essig für die Salatschüssel.
Aceto Balsamico di Modena IGP Platinum ist ein Balsamessig der Acetaia Malpighi in Modena und steht im Sortiment zwischen der Gold-Stufe und dem Tradizionale DOP. Die Einordnung hilft beim Verstehen. Der Silber bringt 70 % Most und eine Dichte von 1,28 mit. Der Tradizionale besteht aus reinem Most und reift mindestens zwölf Jahre. Der Platinum kommt mit 90 % Most und 1,36 dem Tradizionale in der Textur am nächsten. Er bleibt dabei in der 250-ml-Flasche. Wer die Dichte eines DOP sucht, ohne die kleine Flasche zu kaufen, landet hier. Und wer den Silber schon kennt, erkennt im Platinum dieselbe Handschrift mit mehr Gewicht.
Samtig auf der Zunge, die Säure bleibt im Hintergrund
Der Platinum legt sich samtig auf die Zunge und schmeckt nach getrockneten Pflaumen, dunklem Honig und Holz. Die Säure kommt spät und leise. Seine Farbe ist ein tiefes Braun, im Glas fast undurchsichtig. Vom Löffel zieht er einen langsamen Faden, der auf dem Teller liegen bleibt.
In der Nase ist er rund und voll, ohne die stechende Essignote, die viele Menschen von Balsamico erwarten. Wer die Flasche öffnet, riecht zuerst Frucht, dann Holz, erst zuletzt Säure. Auf dem Teller verändert er sich mit der Wärme des Gerichts und wird über lauwarmem Gemüse deutlich duftiger als aus der kalten Flasche.
Die Süße stammt vollständig aus dem eingekochten Most und wirkt deshalb nicht klebrig, sondern rund. Im Abgang kommen Noten von Feige und Röstbrot dazu, und das Holz der Barriques gibt eine leichte Vanille mit. Ein einzelner Tropfen hält auf einem Bissen Parmigiano mehrere Sekunden an. Danach bleibt ein Hauch Holz zurück, der zum nächsten Bissen einlädt.
Wer einen frischen Balsamico für einen grünen Salat sucht, wird den Platinum als zu dicht und zu süß empfinden, denn seine Säure reicht für eine Vinaigrette nicht aus. Auch als Marinade für Fleisch ist er ungeeignet, weil die Mostsüße beim Braten schnell bitter wird. Er ist ein Essig für den letzten Handgriff, nicht für den ersten.
Tropfenweise auf das fertige Gericht
Der Platinum kommt kalt und tropfenweise auf den Teller, wenn das Gericht fertig ist. Auf Tomaten mit Büffelmozzarella setzen Sie fünf bis sechs Tropfen pro Portion, mehr nicht, sonst überdeckt er die Milch. Über einer Tagliata vom Rind ziehen Sie einen dünnen Faden quer über die Scheiben, nachdem das Fleisch fünf Minuten geruht hat.
Ein Risotto mit Parmigiano bekommt drei Tropfen auf den Teller, direkt vor dem Servieren. Eine Ratatouille aus Aubergine, Zucchini und Paprika verträgt einen halben Teelöffel, in die lauwarme Pfanne gerührt. Auf Bruchstücken von 36 Monate gereiftem Parmigiano genügt ein Tropfen je Stück. Das ist die klassische Art, einen dichten Balsamico kennenzulernen.
Zum Bollito misto, dem gemischten Siedfleisch aus der Emilia, gehört er wie die Salsa verde. Ein halber Teelöffel neben dem Fleisch auf dem Teller reicht für vier Scheiben. Gegrillte Auberginen und Zucchini bekommen nach dem Grillen ein paar Tropfen auf die Schnittfläche, solange sie noch warm sind.
Süß kann er auch. Zu 250 g halbierten Erdbeeren passt ein Teelöffel Platinum, zehn Minuten ziehen lassen. Über einer Kugel Vanilleeis aus der Eisdiele wird aus dem Essig eine Sauce, die niemand als Essig erkennt. Einen Schritt weiter geht der zwölf Jahre gereifte Tradizionale DOP, der noch dichter und noch leiser in der Säure ist.
Aus Erfahrung: Halten Sie die Flasche mit dem Ausgießer senkrecht über den Teller und zählen Sie die Tropfen, statt sie zu kippen. Zum Ablöschen einer Pfanne oder zum Reduzieren taugt der Platinum nicht, das übernimmt der mitteldichte Balsamico aus derselben Reihe.
Rovere-Barriques und 3.000 Fässer unter dem Dach
Der Platinum reift in Barriques aus Rovere, der italienischen Traubeneiche, deren enges Holz den Most langsamer atmen lässt als Stieleiche. Die Acetaia Malpighi besteht seit 1850 in Modena, und Massimo Malpighi führt sie in fünfter Generation. Die Trauben, Trebbiano und Lambrusco, wachsen auf dem eigenen Gut Tenuta del Cigno vor der Stadt.
Der Most wird nach der Pressung eingekocht, bis ein guter Teil des Wassers verdampft ist. Was bleibt, ist ein dunkler, dickflüssiger Mosto Cotto, in dem Zucker und Fruchtsäuren konzentriert vorliegen. Genau diese Konzentration erzeugt die Dichte von 1,36, ohne dass Stärke, Zucker oder Zuckerkulör nachhelfen müssten.
Most und Weinessig aus eigener Herstellung reifen bei Malpighi getrennt im Holz, bevor sie zusammengeführt werden. Das Fass gibt Gerbstoffe und Vanillin ab und lässt über die Jahre Wasser durch das Holz entweichen. Jedes Jahr im Fass macht den Essig also dichter, dunkler und milder in der Säure.
Unter dem Dach der Acetaia lagern rund 3.000 Fässer, einige aus dem 17. Jahrhundert und eines aus napoleonischer Zeit. Bei Malpighi erhält jedes Kind der Familie zur Geburt eine eigene Fassbatterie mit eingebranntem Namen. Wer so rechnet, misst die Reife eines Essigs in Generationen, nicht in Monaten.
Die Geschenkflasche der IGP-Reihe
Der Platinum ist die einzige IGP-Stufe bei Malpighi, die in einem eigenen Karton mit Dosierausgießer kommt. Der Ausgießer ist keine Zierde, sondern die Antwort auf das häufigste Problem mit dichtem Balsamico: den ersten Schwall, der aus einer normalen Flasche gleich einen halben Esslöffel ausschüttet.
Als Mitbringsel zu einem Abendessen erklärt sich die Flasche selbst, und wer sie öffnet, kann sie sofort dosieren. Für Hobbyköche, die einen Tradizionale zu kostbar für den Alltag finden, ist der Platinum die praktische Zwischenstufe. Kühl, dunkel und aufrecht gelagert verändert er sich über Jahre kaum, und der Ausgießer schließt dicht genug, dass nichts eintrocknet. Wer den Platinum einmal neben den Silber stellt und beide vom Löffel probiert, versteht die Reihe in zwei Minuten. Dazwischen liegen 20 % Most, einige Jahre Holz und ein deutlicher Unterschied auf der Zunge.

How it all began
Does this sound familiar? You return from vacation with a bottle of olive oil from Portugal in your suitcase, a jar of fruit spread from South Tyrol, perhaps a bar of chocolate from a small factory in France — and you ask yourself: Why can't I find something like this easily at home? We kept asking ourselves this question.
We are Kerstin and Stephan Uhlenbusch from Nordhorn, a city on the German-Dutch border. On our travels through Europe, we made the most wonderful culinary discoveries: mountain apple juices from the high altitudes of South Tyrol, Breton barrel butter, handmade pasta from Italy, French sea salt. It wasn't the big luxury products that fascinated us, but rather the honest, artisan-made foods from people who put their heart and soul into their products.
In 2002, we decided to turn this passion into our profession: to make good food accessible to everyone who cannot travel to the producers themselves. This is how our gourmet shipping business came into being — initially as a store in Nordhorn, soon after as one of the first gourmet online shops in Germany. Back then under the name nur Gutes (only good things) — today we continue it as ginussland.com. The ambition has remained the same: this is where good taste resides.
Who we are
What drives us is the same curiosity with which we started in 2002: finding out who truly makes good food. Over more than two decades, we have built a network — with producers, traders, restaurateurs, and culinary artisans from all over Europe.
Kerstin was the managing director of the association of leading delicatessen merchants in Germany — the industry association of the country's best owner-managed delicatessen stores. In this role, she not only accompanied but actively shaped the German delicatessen industry. With the deli Festival, we also launched our own B2B trade fair for delicacies, which brought together producers, traders, and restaurateurs from all over Europe. The festival no longer exists today — but the relationships that arose from it still accompany us.
What does this mean for you? We know our industry like almost no one else. Chambers of commerce and economic development agencies from all over Europe repeatedly introduce us to exciting producers who want to offer their products on the German market. This way, genussland always offers something you won't find in any supermarket and hardly in any other shop.

An extra virgin olive oil from Portugal, a genuine Aceto Balsamico from Modena, Fleur de Sel from the Breton coast, hand-mixed spice blends. Fruit spreads, aromatic honey, truffle delicacies, chutneys, and mustard sauces. Vintage sardines and fine canned fish, risotto rice, and handmade pasta — basic ingredients for honest cooking and specialties for special moments.
Our fresh delivery service brings the legendary Beurre Bordier from Brittany, Italian Burrata, and fine salami to your home — securely packaged and continuously chilled.
Wine is particularly close to our hearts: white wine from Rheinhessen and the Pfalz, red wine from Austria and Burgenland, rosé for barbecue season, natural wine for the adventurous, sparkling wine and champagne for special moments. Not from all over the world — but from winemakers we have personally visited and whose work we appreciate. Many of them work organically or biodynamically.
Our Philosophy
What makes a product a genussland product? We ask ourselves this question for every single item we add to our range. The answer is never one-dimensional – it's the combination of craftsmanship, origin, ingredients, and the people behind them.
We ask many questions before a product finds its way into our shop. How is it made? Where do the raw materials come from? What philosophy does the manufacturer pursue? We quickly notice whether we are hearing marketing clichés or if a producer is happy to explain their journey. It is precisely this enthusiasm that we seek – and repeatedly find.
Craftsmanship. We prefer products from small manufactories and family businesses that often produce their culinary treasures by hand for generations. The careful processing and artisanal skill can be tasted in every bite.
Best Ingredients. For us, good quality begins with the raw materials. Whether it's fruit, vegetables, milk, meat, or grain – we ensure that our manufacturers rely on first-class, as natural as possible, ingredients. Many of our producers are organically certified; our shop itself is organically controlled under the number DE-ÖKO-037.
Origin and Regionality. We appreciate products with a clear regional identity. A South Tyrolean mountain apple juice made from slowly ripened, old apple varieties. A Portuguese olive oil from trees that have shaped the landscape for centuries. These stories of origin make delicacies what they are.
Personal relationship with the manufacturer. We have known many of our suppliers personally for years, some for over two decades. We visit them, taste together, and exchange ideas. This proximity guarantees transparency and trust.
At the end of the day, it has to taste good. We try all products ourselves – not just once, but again and again while cooking, at the table, on the plate. Only what convinces us personally finds its way into the shop.

What brings us the most joy: We get to accompany passionate individuals on their journey. People whose drive it is to make a good product even better. Some have been with us since our founding - for over twenty years.
There's the South Tyrolean fruit farmer who presses mountain apple juice from old, slowly ripened apple varieties, unlike anything else. The Italian balsamic family who ages their vinegar in Modena for decades. The Breton butter manufactory whose hand-churned butter is on the menu of the best restaurants in Europe. The Danish licorice pioneer who reinvented a centuries-old specialty.
Behind every product in our shop stands a person, a family, a story. And it is precisely these stories that make the difference between an interchangeable food item and a true delicacy.

We deliver nationwide within Germany with no minimum order value. Shipping with DHL Standard is free for orders over €99.

Island deliveries and deliveries to packing stations are only possible via DHL. Delivery during the day on weekdays, Monday to Saturday. If delivery is unsuccessful, collection from the post office is required.

Refrigerated Shipping
Our product range includes food items that react differently to heat. To ensure that every product arrives in perfect condition, we handle the shipping of two product groups with particular care.
Products requiring refrigeration
These items are marked with the note "kühlpflichtig" (requires refrigeration) in our shop — for example, Bordier butter, Parmigiano Reggiano from Cavola 993, Pancetta and Guanciale from Falorni, mountain herb ham and Tyrolean dumplings from Steiner, Prosciutto Crudo and truffle butter from Viani. We generally ship these products by express delivery with ice packs. They are only available via express shipping. The shipping costs will be clearly displayed before you complete your order at checkout.
Temperature-sensitive products
These items are marked with the note "temperaturempfindlich" (temperature-sensitive) — for example, salami and bacon specialties from Falorni and Steiner, as well as Goufrais cocoa confectionery. In cooler weather, they can be sent by standard shipping. In warmer weather, we switch the shipping to express shipping with ice packs before checkout — in this case, this shipping method is the only option, and the corresponding shipping costs will be displayed at checkout.
Shipping days for refrigerated and temperature-sensitive orders
To prevent any package from remaining in a distribution center over the weekend or public holidays, we only ship refrigerated orders from Monday to Thursday. Orders placed after Thursday will generally not be shipped until the following Monday. In summer, this rule also applies to temperature-sensitive products.
Packaging
Depending on the manufacturer, sausage and cheese specialties are supplied either vacuum-packed or traditionally without foil — for example, Italian salami from Falorni. If air is visible in a vacuum package upon delivery, this is not a quality defect. Please unpack the item and store it in the refrigerator, ideally wrapped in sausage paper or greaseproof paper.
Freight Forwarding
Freight forwarding is used for products that cannot be delivered as a package due to their size or weight. The selection is made automatically before completing the order. Please provide your phone number for scheduling the freight forwarding delivery.
Delivery Area
Currently, we only ship within Germany. Shipping to Austria is in preparation — as soon as we can deliver there, you will find the details here.
Products subject to excise duty (alcohol) cannot be shipped to Austria.
Alcohol
Alcohol can only be shipped to adults. The deliverer will verify age upon delivery. By ordering alcohol, you also confirm that you or the recipient are of legal age.
Shipping Service
For manual creation of shipping labels, we charge an additional €2.50 per shipping label in addition to the stated shipping costs. Please note that we cannot retrospectively combine orders that have already been placed.
Investigation of failed payments
For the investigation and refund of payments incorrectly made to us, we charge a processing fee of €5.00.
